Can't wait to try this! I didn't make any pepper jelly from my reapers or scotch bonnets last year because I had so much trouble finding LIDS of all things! Fortunately, I learned my lesson and stocked up for this season.

Omg thank you so much. I was intimidated by this jelly. The way you explained each step and the canning process was very educational. I've never tried making this but thanks to your tutorial I'm willing to try it. I had shine jalapeño jelly when I visited my In laws in Louisiana. That got me hooked on this delicious jelly. Will have to go get the ingredients to start them. It will make excellent gifts. God bless you and your family.

What about Honey or some other sweetener besides sugar. Not diabetic or anything, just like to do things with as little processed sugar as possible. Maybe some erythritol? Or maybe half/half?

How do you keep the vegetables from floating to the top? Also, my recipe from Bernardin tells you to remove the pot once boiled and add the Certo liquid, stir, a fill the jars.

I’m new to canning. While I didn’t use this recipe for my pepper jelly I’m now looking how to fix it. It didn’t set so based on what I found on line if it was watery add the same amount of pectin and recoil. I did that and it it still didn’t set. Can you reprocess jelly for a 3rd time?

I am a jam and jelly maker...the recipe is great. But my peppers all floated to the top even after stirring a couple of times. Any suggestions?

I have had that happen before... while it’s cooling you can give it a shake, you gotta catch it just before it gels though.

Question: if you leave the jars on the counter overnight, and for some reason, they don’t seal, do you have to get rid of the contents? Also, just a tip, people may want to consider using disposable gloves when chopping the jalapeños. They can burn your skin, and the burn can last for a day or more. (found out the hard way 😄)

You can also re-can things that didn’t seal.

How long does it take for the jelly to fully thicken? I just made this and my jars have cooled down but jelly is still really loose/runny. It’s been probably 5 hours by now…

I've had plenty of Runny jelly until I watched a channel where she adds 1-2 more teaspoons of pectin then jelly up perfectly.

So you check the jelly by cooling it down much as refrigerator temperature. Imo Question ⁉️ Help ! If it's running such ( as mine) then what ? Also had a batch turn to sugar..

I made this today. The flavor is awesome! Mine did not set. Once you check for setting and discover it isn't quite right should you cook longer? If so, how much?

Question: I made this delicious jam last night ! It set very nicely and is very good. But I didn’t boil water and put them in jars I just stuck it in clean jars and refrigerated. Will it be okay if I mail jelly out? It’s for gifts

A bit late but I know the boiling of the jars helps both with sterilizing the jars ans more importantly to help seal them air tight, creates vacuum, which is important if you want to store them long-term. If you skip the sterilization your conserves MIGHT go bad due to bacteria growing or even a fungus. But if you're sending them like, next-day and the people who receive them eat it quickly and refrigerate it shouldn't be such a big deal.

You do not need a special pot for waterbath canning... you just want some kind of rack to keep your jars off the bottom, a round cake rack works great, I've even used a clean wash cloth in a pinch. 😉 and it needs to be tall enough to have 1" of water over your jars and a cover.

I made your wonderful Hot Jalapeno Jelly and we like it on just about everything we eat. Except for a few of my friends who thought it was not hot enough for them. So I want to take care of them and was wondering what you would recommend. Do I add more Jalapenos and or less sugar. I can also puree the jalapenos, but I am waiting to hear your suggestion. We want to thank you for a great, easy to make Hot Jalapeno Jelly. Thank you. S&P

I used red jalapenos, added red pepper flakes, a pinch of salt and some fresh tarragon. That added a few.layers of flavor.

Yes, but it will change the flavor, I would just taste it to adjust the sugar. ;)

I'm going absolutely insane. I've tried googling my problem and there's zero results. My issue is that I waited too long to put my jelly mixture into my jars and it started to set in the pot. Now it's all chunky and bubbly because I didn't can it while it was still liquid. How can I fix this!??! Everytime I google my issue, no matter how I word it, the only results I get is how to fix runny jelly. Not how to fix jelly that's set too quickly before I could jar it. Can I reheat the jelly to turn it liquid and then re-can it? (I used liquid pectin). Help!!!

I made this recipe tonight…not sure what I did wrong. My jam isn’t red….it’s more of a golden color and all of the peppers are at the top of the jar. Not sure how it tastes. ☹️.

when I made your recipe today, all the peppers rose to the tops of the jars, didn't stay mixed throughout like yours did. What did I do wrong? Very disappointing...

Cooling and decanting into jars This is my favourite part, but I allow the jam to cool and thicken for about 10 minutes before pouring it into jars, to prevent the fruit from floating to the top. Try not to leave the jam too long, however, as lukewarm jam is a great breeding ground for mildew spores which are present in the air.

If you are processing longer than 10 minutes you don't have to sterilize your jars.
