When I was looking for videos on how to raise rabbits for meat about 4 years ago, your video was the first one I watched. I have watched your channel ever since. I still haven't raised any rabbits, but I continue to learn from your new and previous videos. This was wonderful!

In 1944 one of my older sisters married. And all household matters in clued in culinary arts she was well trained by our mother, who was also a fantastic but frugal cook. (it was WWll time) Sis’s mother-in-law, a 1st Gen Croatian woman- showed her a thing or two about frugality that even our mother didn’t use: Include onion skins & trimmings (minus roots) in a broth pot! Sis thought it so wonderful that she could teach her own mom ‘something new’. A favorite family story that has been passed down to my 8 sisters & 4 brothers

My Grandmother loved fried Rabbit. She wouldn't touch Fish, Deer, Squirrel, or other types of Meat. She said "Rabbit sets good on my stomach." She grew Rabbits for many years. Thanx for sharing, God bless.😃

I canned meat for the first time this week. It was both nerve wracking and exciting to have gotten the first batch done. I’m excited now to keep going! I so appreciate the things I learn and am encouraged to do by watching your videos and some others that I feel do a great job of teaching. Thank you for the video and encouragement to keep going. @@angelal6700 thank you. I did chicken chunks and some beef stew meat. I’m planning to do some meals in a jar and I’ll also use beef and chicken in those. Not exactly sure what meals I’ll do but I’ll work on getting some ideas.

We always lived out in the country. Mom and my oldest brother went hunting for rabbits to supplement our beans which were our main source of protein. They would sometimes bring home 2 rabbits, dress them and we would feast. Cottontail rabbits taste better than Jackrabbits and is more tender. Tame rabbits don't have the good taste of wild rabbits but I still like to eat rabbit when I can afford it. Thank you for sharing.

Hi Sarah, when dipping or pouring liquid’s from one vessel to another always put your ‘from’ vessel on the right and your ‘to’ vessel on the left, touching if possible. As you pour, any drips or runoff will go back in the original vessel and saves a lot of cleanup. This works for any job from straining broths to filling jars with any liquid, even jam/jelly. When I add liquid to jars I just line up the jars and slide them up to the edge of the pot. All the dribbling over the counter, gone! (Of course if you are left handed switch sides !) also, after years of tying my strainer to the handle of the pot I saw your spoon in the loop trick and I just love it!❤

Domestic rabbits have white meat similar to chicken. Wild rabbits, such as the cottontail, have dark meat. My family has eaten both with gusto. Great video.

We freeze dry our extra broth. It makes usage amounts much more flexible

I live in town and raise meat rabbits and have laying hens. Rabbits are a perfect small animal to have, bonus pellets for the gardens. I've never thought to use my roaster for a big batch, I use it for everything else canning. lol I make my broth almost exactly like yours. My aunt used to use onion skins to color Easter eggs so you are so right on the color.

I’ll be doing this in my next life - I’m 79 and suburban with virtually no yard - but love watching you preserve. I canned for the first time last year when I made cowboy candy from my jalapeño plants! It’s SO relaxing and you make it easy and fun. Thank you Sarah. My friends think I’m nuts ❤

Thank you so much for this process. We raise Silver Fox rabbits and we can the meat in broth but generally used the inst-pot to cook the cut up buns 3 at a time as prep. I just harvest 5 roosters and used your process in our Nesco. OMG it worked wonderfully and the broth turned out incredibly. Pressure canning it all today.

Sarah, have your ever grown Lovage. It’s a fantastic herb that has a celery taste. It’s great in soups and stews. It also freeze dried great.

Wow. My mom used to use a similar pressure cooker for years when I was a kid. I worked with it like I knew what to do, back then. When I saw it still sitting in my late parents house recently, I was looking forward to some of those meals my mom would make in it. But that was well over 30 years ago and didn't have a clue how we used it. I did some research and found that they are very dangerous if you don't know the proper methods - especially with the old ones. I definitely do not remember my mom timing before putting the weight on or any of those calculations! I'm glad it went in the dumpster - it would have blew up if I had tried using it. ;-)

I find it would have been interesting to know the weight of the raw meet you have put in the roaster oven and the weight of cooked meat you got after deboning. Gives us an idea of how much meat we need for a batch of canning.

I remember eating rabbit once or twice when I was kid. It wasn't bad. Mom made a dressing from cream of mushroom soup. It does taste a lot like chicken. I always add vinegar to bone broth. I always appreciate your through instructions. I don't know anybody that has ever pressure canned rabbit meat. This is a first for me. Amazing how much you got out of those 4 rabbits.

Hasenpfeffer was a staple in my granny’s kitchen. They lived in VERY rural Kentucky. I learned to love the tartness of the meat. She also used vinegar in the gravy😊

I loved your tip about putting a spoon holding up the strainer so it doesn't go into the large pot. You have such cleaver ways of doing things, I've always enjoyed your channel. I've never tasted Rabbit meat before. I used to have a couple for pets for my daughter when she was small.

I love Rabbit. I can't get anyone in my family to eat it with me. The only thing I can get them to eat is deer. I eat all of the other meat, Squirrel, Bear, Bison, and Lamb. Thanks for posting this video. You are such a good teacher. 💛👏

I've never tried rabbit meat before nor do I know anyone that is raising rabbits but the broth recipe looks amazing and it would work well with making chicken broth!!

A couple of years ago I bought a Bay Laurel tree/bush. It's growing slowly. I love being able to go out there and pick bay leaves, dry them out and put them in a jar. I give them as gifts as well. You might do well to get one and plant it on your property. One less bulk item to purchase. 😁

I have a bay Laurel bush/tree that is 30 years old. I periodically cut a couple branches and just stick in my pantry as is and pick off what I need. I am also growing black peppercorns. They won’t produce for a year and need to come indoors during the winter but they will produce all year. Both would do well in your greenhouse.

@@jo-annjewett198 Thank you, I may try that at some point. I do not have a greenhouse....yet :) My Bay Laurel is in my back yard. How big is the plant? Can I carry it in and out of the house? I'm near Greenville, SC so the winters are not too bad. I have 2 avocado trees that are a about a year & a half, which I just brought back into the house. Hoping to plant them outdoors next Spring if they make it through another indoor winter.

My grandmother used to can wild rabbits in the 1930’s when my grandfather was out of work. That’s a lot of rabbits for a family of 8. She canned them in a hot water bath, not USDA approved, but that’s the way everyone canned in those days. Many people still do, but I would prefer pressure canning meat. You have to do what you have to do to survive. 💙

I have saved half the amount for the freeze dryer for mama since ur give away video. All with my manly hush money fund. AKA mileage payments for work. Hopefully I can surprise her for christmas. Since our canning harvest here in U.P. of Michigan mama hasnt spoke much of the Harvest Right machine so its gunna be a total surprise to her. I'm so excited. I finished her pantry and put some shelves in one spot that seem to stick out so I can un screw them quickly and put the machine in that spot for her. Already wired in a dedicated circuit. Only comment she had was " what an odd place for an outlet". I just told her I didnt have a junction box to extend a wire for the pantry lite. Hopefully ur discount code still works christmas time. I don't know how you manage to stay clean! Every time I try to make broth or can, I get spots and stains all over my clothes. LOL. The best tip was putting a spoon through the opening of the colander, who would've thought something so simple could be so useful.

We raised rabbits when I was a kid. My mom would cut them up and fry them like chicken - but ours were much younger and smaller, so they were very tender. I liked the fried livers. They were solid like beef liver, but sweet like chicken liver.

From a person who spent his career growing and selling celery. A stalk of celery is the entire bunch. Each individual "stick" is actually a petiole. We grew about 3000 acres of celery every year, in FL, OH, MI, GA, AZ, TX, and CA, as well as Canada and Europe.

I wouldn’t have thought you could grow celery in those hot climate areas like AZ and TX.

Celery is related to lettuce and is considered a leafy vegetable. AZ grows a ton of leafy items in the winter. Texas is a challenge but celery does ok in Siuth Texas. There's a lot of celery grown in Mexico but I was never involved in that region. FL grows a decent amount but it's harvested December thru April. Celery does best with cool nights. That's why it dies so well along the Pacific ciast. It can tolerate some frost as well as some heat, so it's a bit more hardy than lettuce.

I like to use a big measuring cup, similar to when you strained the broth, to fill my jars. It's faster, there's much less dipping and it eliminates the need for a wide mouthed funnel.

I love rabbit. Never had it canned. My grandparents raised some rabbits for meat. But they didn't do it for a very long. That's where I got to try and rabbit for the first time. I would love the opportunity to have rabbit again. And to have it canned, that would be awesome.😊

My parents raised rabbits and ducks in Oakland, CA in a residential backyard during WWII. They sold some of the meat to neighbors. I never asked my mom how she stored their meat. I am guessing they ate it fresh and sold what remained until the next group were raised.
