For the final 2021 Canuary video we are canning lima beans. There are mixed statements regarding pressure canning lima beans. Some say they get mushy, some say they are great. Today we're going to can up some lima beans and see what the results are.

In Texas the little green one's are lima beans , and the big ones are butter beans , the butter beans are smooth like butter. GOD BLESS

Do you realize how many people in this country alone kept themselves alive well on different kinds of beans? My mother told me about her grandmother telling her about what they ate on a Wagon Train! Everyone packed beans to make it across this very large Country. If some child didn't like them, they kept the fact quiet and ate them any way! It is amazing! I can reference this fact because I am 77 years old and have spoken to some of these people before they died!

If they turn out mushy try this. My uncle would mash up lima beans, add flour, water seasonings and cook them in a Belgian waffle iron. They are crisp on outside and creamy on the inside. Adding bacon or bacon grease might be good.

Suggestion, if you use ham broth it adds a lot of flavor to them when you go to eat them.

@@sowaseedblakley9769 I use broth all the time and also about 1\2 of them I put small chunks of ham as these beans take the same amount of time as meat so that is what got me into doing it different ways.

I just saw the video on lima beans. When I can lima beans I only fill the jar 3/4 full with the soaked beans and then fill with hot water to 1 inch of head space We just love them.

Too many beans in the jar Leisa. 3/4 full then add hot water. That is my experience. 🤗🏝️

My favorite quick dinner is Lima beans simmered gently in whole milk with salted butter and lots of fresh ground black pepper. Slice of homemade bread buttered and a chunk of room temp Colby cheese

I love my canned “butter beans”. I like the small ones and I can them with a thick gravy. I fully cook mine with some Tasso. So good over rice and cornbread. I usually open a jar with a jar of my spicy pork and a jar of carrots. So yummy!

@@carolynmoody9460 I cook them on the stove till they are cooked to a soft texture and mash a few of them on the side of the pot when stirring. Make a rich and creamy sauce or gravy that is perfect over rice and some good cornbread.

I'm soon to be 70 and I love your videos. I am learning SO much. Heading 55 miles to moms to borrow her meat grinder and pressure canner so I can make meatballs. Thank you again for such wonderful ideas. I am slowly adding to my food pantry.

Not the end of CANUARY already! 😢 This has been such a wonderful, exciting thing to look forward to every day! Thank you to all who participate AND thank you to all who leave comments. I learn so much by the videos as well as reading all the commenters tips & tricks! We’ve got to have this more than once a year pretty please? 💜 I’ve got lima beans that I need to can & this reminded me. I almost forgot! Yesterday I canned the Cardamom-Orange-Date Preserves. I’ve canned quite a few things this CANUARY that were suggested here & plan on doing most of not all of them in February. Thanks SO much!!!

Being from Georgia parents, I was taught that Lima beans are the big white beans and butter beans are the much smaller green beans. I was taught to cook the limes until soft, some are much softer than others, and served over white rice. We tend to eat alot of cooked vegetables over rice. Love it that way.🤗

I’m one that loves Lima Beans. I want to start canning really bad. I need a canner. My mother canned all the time. I have water bath can some in the passed, but want to start pressure canning. Thank you for the help. 😊

when heating them try adding a dash of milk, salt and pepper with the butter. Yummy!! My mom always cooked the dry beans with water and then added the milk, salt, pepper and butter in the last hour of cooking.

I put less beans, add small cubed ham, and that way they have more soup in them, delicious and yummy.

To a pint jar, I only put a rounded cup of beans and water, I process for 70 min and they are not mushy.

I have added ham, and smoked sausage like the round style , cut into 1 inch thick pieces.. that was for Northern beans and Baby Navy beans.. cooked 60 min since the meat was already cooked.. came out perfect.. even used onions celery carrots and Made Bean Soup.. I used powdered chicken bouillon 1 teaspoon for each quart.

Going to give you a giggle. I was watching one of those "Don't eat at this restaurant." videos, and one of the restaurants they mentioned was Wendy's. The reasoning was Wendy's doesn't use chili beans in their chili. Oh, no. They use dry kidney beans and have to cook them for hours... can you imagine? lol Of course I left a comment for the poster that all beans start out that way and need to be cooked...lol I just can't with these people. What are moms, grandmas, etc., teaching their kids nowadays? Does no one teach their kids how to cook beans?

A lot of young mothers on wic do not buy dry beans because they dont know how to cook them. lol. Really. The simplest thing in the world TO cook.

I cook my lima beans with either smoked bacon, neckbones or ham hocks, onions, garlic, and seasonings. Like most beans they have a natural thickening to them. Thanks for sharing; now I know lima beans can be canned.

I love limas! Canuary has been great with so many new and different ideas for canning. I’ve been canning for more than 40yrs but it’s always nice to get a new recipe!! Thanks Leisa and all the other participants!

Canuary was a genius idea! I learned so much! Thank you! I love legumes! My sister doesn't and complains at how many legumes I serve. So, she can get her own! On another note: I have another sibling whose dislike of lima beans led my parent to have Santa present her with a certificate stating she did not have to eat lima beans! That was 45+ years ago and she still has it sealed up and protected. She carries a pic on her phone for proof! Lol!

Thanks for another great canning video. II’ve never thought about canning Lima beans, but will have to try it out. They look delicious. Thank you for such a great canning series. I have absolutely enjoyed seeing all the different foods being canned. It has taken a lot of the fear away that I had about pressure canning. Hope to see Canuary again next year. Love your channel.

CANUARY! FINALE! GREAT VIDEOS! We raised Lima beans for the last couple of years. I am loving having beans of all kinds in my pantry! Thank you Lisa for organizing January canning videos. They are providing so much inspiration for the upcoming year!
