Carne Guisada is one dish that I love as much as BBQ. In this video we demonstrate how to make a delicious and traditional carne guisada, all the way down to the live fire and fresh spices ground in the molcajete.

I first had carne guisada in a small town in South Texas back in the early 90's. Living in North Texas, I've searched high and low since and never had the same experience as I had in that small town. Wish I could remember the name of the town. I am so going to make this. You made this a simple and easy recipe and I can't wait to make this.

I'm going to give this recipe a shot. When I was in the Air Force I worked a lot of night shifts. I used to get carne guisada tacos for breakfast at a taqueria outside the gate at Lackland AFB in San Antonio when I got off of work. There was another place that had carne guisada in a burrito that was really good. Later on, I live in Utah and can't find any tex-mex worth a damn.

@Lavadx
@Lavadx Жыл бұрын
@@strummercash5601 I've got a good one for you, a truly "local" dish for people raised in Hawaii, taught to me by Leila Keawe Aiko, my best friend's wife 35 years ago. It's called Shoyu Chicken. Rough chop a whole onion and saute until brown in oil, add 3 cloves of chopped fresh garlic and a couple slices of fresh ginger that you smash to release the flavor and sauté for 45-60 seconds until you can smell it, then dump in a cup of Aloha Shoyu (soy sauce), and one cup of regular sugar. Cook for a few minutes until sugar is melted 100% and the sauce is starting to boil. Add in 2-3 lbs of bone in chicken thighs with the skin removed, bring it to boil, cover, and reduce the heat to medium low (3.5-4 on the range), and simmer for 1.5-2 hours when the chicken is tender. Just take out the chicken and serve it over whatever your starch is with a little sauce for flavor. I serve mine with white rice and a can of corn with butter with a little salt and pepper. and some Won Bok Kim Chee. That is as local as it gets in Hawaii friend, every family in Hawaii eats that once a month at the least, you will too once you try it... If possible, try to find Aloha brand shoyu, even if you have to order it and wait. Kikoman shoyu is too salty, but can be used if you add a half cup of water to the 1 cup of shoyu to thin it down a little. Kikoman is made for dipping or making Poke, Aloha is for cooking... A hui hou...

@Spying Beast Wow! Thank you so much. I appreciate the recipe-which sounds delicious-and knowing from whom you’ve learned it. I recently was recommended by the Gods of Algorithms one channel: Tribal People Try in which Pakistani elders from remote villages try worldwide cuisines and another that features British high schoolers doing the same, most recently southern biscuits and gravy with chicken and sweet tea which one dubbed “proper nice”. On both channels, the participants are so gracious, enthusiastic-if-skeptical, downright funny, and incredibly endearing-I would like to see an episode of Pakistani tribal men and British school boys go out together for Russian pierogis or some such meal. Just as laughter and crying sound the same in any language, our love and appreciation for, our sharing and exploring of food, its origins and the traditions created around it, are universal and unifying. If we choose. Thank you again! What a wonderful gift you’ve shared with me. 🙏🏽✌🏽❤️

Thank you for sharing. My wife is Filipina, I'm originally from Jalisco then Tijuana then Southern California. Recently moved to San Antonio Texas. We used to have a catering business. Our oldest son is in Spain, a professional chef, so we like cooking. Your channel is our favorite Tex Mex cooking channel. I've seen a few carne guisada videos because I've never tasted it until we came to Texas. I see the veggies, "Trinity" from Louisiana instead of a French Mirepoix of just onions and peppers. You put in the flour raw with water like a slurry instead of browning the flour alone or with a fat like a rioux, interesting. I like your approach on the amount of water, you can always reduce. Thanks again!

Ok. This man knows what he is doing. My Dutch great grandmother. Yes Dutch. She spoke Portuguese and my so did my Spaniard great grandfather. She would use the cumino seeds with garlic cloves and grind them in the molcajete. This was also the way she added flavor to Spanish rice and paella.

I can't wait to try this at my house. I love carne guisada and found out when we moved from south Texas to Colorado, that they don't have carne guisada here and they don't even know what it is. I was spoiled in being able to run down to the corner neighborhood taqueria and get carne guisada tacos anytime I wanted. I've made them a couple of times, but I didn't have the right recipe because they didn't quite have the right flavor profile. Definitely trying this on my stovetop.

I'm so glad I found this channel. 💜💜I have always loved Tex Mex cooking but my own life experience is so far away from this cooking style. I grew up in the Southern US so I grew up on soul food and then I went to culinary school and became a chef and learned French method cooking and baking primarily. I always wished to know how to make good Tex Mex and Asian cooking. I'd been watching Asian chefs and cooks on YT for a few years now and learning that style but now, for Tex Mex, you gonna be my go to. Thank you! Nicley done, Arnie! My aunt used to live in Del Rio and had a decent carne guisada recipe when I was a kid. I've not had it in years. Yours looks MUCH better. I may have to give this recipe a try. Smoke on, Brother!
