This recipe for carrot cake cupcakes are tender, moist and just the right amount cinnamon and ginger. They are topped with an amazing cream cheese frosting and the recipe makes 4 cupcakes.
My favorite brown sugar softener: amzlink.to/az0LXo3FHAAMf
Ingredients:
1 egg
2 Tbsp granulated sugar
3 Tbsp brown sugar, packed
1/4 tsp salt
3/4 - 1 tsp cinnamon
1.8 tsp nutmeg
1/2 tsp dry ginger
3 Tbsp vegetable or canola oil
2 Tbsp sour cream or plain Greek yogurt
1/2 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup all purpose flour
1/3 cup carrot, grated
Frosting:
2 oz. cream cheese, softened
2 Tbsp softened salted butter
1/4 tsp vanilla
1 - 1 1/2 cups powdered sugar
1/2 Tbsp milk or heavy cream
Garnish with chopped nuts if desired.
Directions:
In a bowl combine egg, sugars, salt, cinnamon, nutmeg and ginger
Whisk to combine.
Add in oil, sour cream, vanilla, baking soda, baking powder and flour.
Mix together and then add in grated carrot.
Line a muffin tin with cupcake liners.
Fill with batter.
Bake at 350 degrees F for 15 - 18 minutes or until a toothpick comes out clean.
Cool completely before frosting.
Frosting:
In a bowl combine. cream cheese, butter, vanilla, powdered sugar and milk.
Mix together until smooth and a good spreading consistency.
Frost cooled cupcakes.

I am in the same boat, now only Cooking for one, and yes sometimes I don't cook at all..... it's difficult cooking for one...

You can also add a piece of bread to your brown sugar occasionally to keep your brown sugar soft.

OH YUM!!!!!! Even without carrots, it makes a GREAT spice cake! Don't like grated carrots??? Use pureed carrots, like baby food carrots! I will make some in snack bags (without wet ingredients) to portion it out, and use them like a boxed cake mix. Just grab one and make it with the wet ingredients. Thank you for this fabulous cake recipe! Good as always!
