Cauliflower-Crust: Pizza or Health Fad? || Really Dough?

What started as a health-blogger trend, has now taken over pizzerias from coast-to-coast. Cauliflower-crust has become the go-to low-carb and gluten-free alternative to standard pizza dough. But does this pizza dough alternative fit within Mark Iacono’s rigid pizza rules of sauce, cheese, and dough? On this week’s episode, Scott heads to Adoro Lei to get one of their wood-fired cauliflower-crust pizzas for Mark to try. Will it pass Mark’s pizza bar?
Pizza is one of the most customizable foods in history. Tomato sauce, white sauce, artichoke cream sauce, broccoli, M&M’s, pineapple, edible 24K gold -- a pizza can be anything your heart desires. But should it? Renowned pizza nerd Scott Wiener is challenging the idea that pizza can be anything. He’s traveling all over America, spotlighting these Frankenstein pizzas and trying to make a case for whether these new customizations can, in fact, still be considered a pizza. In the end, Wiener takes these pizzas to Lucali to pass final judgment from the purist of all pizza purists, Mark Iacono, where he will either declare each slice “PIZZA!” or ask with complete disgust, “Really, dough???”

As someone with Celiacs, the fact that this option exists makes me happy. I know it will never be exactly like a traditional pizza, but if the alternative is no pizza for the rest of my life, i'd take this option any day.

It's an intolerance to gluten. There are so many possible symptoms, but, in my case, I get constant numbness and tingling (basically the nerves in my hands and feet slowly die coz gluten is toxic to my nerves). NOT everyone has that symptom. Actually very few do, but yeah. Basically no gluten for the rest of my life lol

San Vgel i can Tell you What makes it low Carb cauliflower has only 5grams of carbs on 100g. Wheatflower has 70grams of carbs on 100g

Cauliflower pizza is the only type I can eat since I'm starch intolerant. I make it myself with homemade sauce (because store ones also have starch in them), but I have to say this dough looks so good that I'll have to keep working on my recipe.

I make it ,since it has less flour. Try the version of Chocholate covered Katie. I have made it couple times. This version is cheese free dough. It melts in the mouth. Even when it had been in the fridge it tasted as good. Good luck

As someone who has been on a low carb diet for 4 years, as of next month, and as someone who has lost over 100 lbs doing so, I greatly appreciate this particular episode of is it "Really Dough?" Thank you. There are a handful of things I really miss on my low carb diet, for the past 4 years, and none of them have so sorely been missed than pizza. While I have been hearing about cauliflower crust pizzas and almond flour crust pizzas from others who do low carb, I have always been skeptical of how similar they could possibly be to actual pizza. However, if the cauliflower crust was good enough for Mark, at least upon initial tasting, maybe I will give it a shot. Finding a decent substitute for the wheat flour pizza crust, which at least closely approximates the flavor and mouth feel of the genuine article, is like me finding the Holy Grail.

@@markbeiser I just made one of these myself - I didn't need to dust it with flower to roll it out, I just pressed it out into shape with my hands onto grease proof paper on a baking tray, then slightly pre-cooked the base then left it to cool before topping it and then baking it just like a normal pizza. After being in keto for the last two weeks, it was just what I needed - satisfied all my pizza cravings!

I really wonder how they make their cauliflower crust. The "dough" looks way smoother than most cauliflower crusts before baking. Also, it usually has to be baked beforehand, then toppings are added and it goes back into the oven. Also baked at lower temperatures than you'd use on a usual thin crust pizza. I'd love a cauliflower crust recipe that can go right into the really hot oven on a pizza stone with the toppings already added, like they do it here.

I've had a couple Cauliflower pizzas and I loved them. And on the mixed "Flour/Cauliflower" dough crust you get a nice bounce that you don't get from a normal pie. Glad Mark gave his seal of approval.

@@Movie_Games You can't really get carb free, almost everything has low amounts of carbs. Low carb is essentially the idea. Also, I'd suggest just lettuce wrapping burgers. Places like red robin and many other restaurants are offering it already. I just prefer the lettuce over the bun so I can eat more fries, lol.

I make my crust using almond flour, eggs, cream cheese, mozzarella..which is then rolled onto parchment paper. Then passata all over it, more mozzarella, then wtvr toppings take your fancy (I usually have chicken, sausage or ground beef, parmesan shavings, spinach or diced green pepper- and mushroom). The pizza on parchment paper is then placed in an oven tray the base of which I spray with coconut oil for a slightly more fried base. Btw Chef Mario would make an excellent voice over artist

Love this video I always wanted a proper pizza guru to tell his opinion of a cauliflower crust pizza . If am making this crust I would add some lightly boiled and minced potatoes it will definitely give the elastic feel and movement of a flour maybe even polenta flour ! There are ways to make it less flaky and more elastic if that's the way you like it. Also the Cauliflower could be made into fine flour instead of leave it grainy that also definitely will help the grainy feel and elasticity .

Nope. Paratha involves wheat and wheat protein with Gobi as the filling. Think of it as a paratha with some filling. A little bit of Gobi or potato or peas. With a paratha being the kind of envelope sealing it in. The crust here is mostly cauliflower with some eggs and other stuff.
