CCK is a very well know Hong Kong based Chinese cleaver manufacturer with multiple product lines, in this video I review the carbon steel CCK 1301 Small Slicer No. 1.
This is the largest of the small slicer family and is only considered small when compared to professional kitchen use cleavers.
This 1301 has a blade about 9.6in (240mm) long and 4in (103mm) tall. Because of a very thin blade the 1301 weighs about 13.6 oz (383 grams) which is light for a slicing cleaver of the size.
The CCK 1301 is one of the best available options for Chinese slicing cleavers.
You can often find CCKs on ebay, the only place I have found then on US websites is at chefknivestogo.com but only in the smaller CCK 1303 size, they are also asking quite a high price, but here is a link: www.chefknives.... I would recommend searching around ebay for a better deal
