This Cheddar Cheesecake is incredible cottony soft and airy Japanese-style cotton souffle cheddar cheesecake, I have to admit it was one of the most challenging cakes I have ever baked. The baking techniques and the temperature is behind it! I have learned a lot from so many mistakes I’ve made throughout the journeys!

Ingredients:
50g flour ( about 5 1/2 tbsp)
40g corn flour ( about 5 tbsp + 1 tsp.)
6 egg yolk ( room temperature)
1 cup milk + 4 tsps.
6 pcs. cheddar cheese slices
1/3 cup butter
For the meringue:
6 pcs. egg whites ( room temperature)
3/4 cup sugar
1 tsp. lemon juice
