▷Cheddar Cheese Cake
Φ15 cm (6inch)
▷Ingredients
‣Cake Batter
130g . . Milk
3 Slices of cheddar cheese (about 60g)
50g . . . Unsalted butter
3 Egg yolks
3g . . . . Vanilla extract
45g . . . Cake flour
10g . . . Cornstarch
‣Meringue
3 Egg whites
4g . . . . Lemon juice
50g . . . Sugar
▷Cook Time
Bake at 250°F /120°C in water bath for 25 minutes. Temperature transferred to 300°F /150°C bake in water bath for 15 minutes. Remove the water tray and Reduce the heat to 230°F/110°C bake for 40-50 minutes. Turn off the oven. After 15 min takes it out
▷Refrigerate for at least 3-4 hours before serving

🥕 If you want to make it in a different size
15 cm (6 inch) → 12 cm (4.7 inch)
Ingredients x 0.67 times, Bake time x 0.8~0.9 times
15 cm (6 inch) → 18 cm (7 inch)
Ingredients x 1.5 times, Bake time x 1.25 times
15 cm (6 inch) → 21 cm (8.2 inch)
Ingredients x 2 times, Bake time x 1.5 times

很喜欢看窝窝菜的视频 不会像别人的视频说一堆有的没的 反而很简洁 bgm也很舒适 材料那些都写的很清楚 搅拌手法也拍的很仔细 🥰🥰🥰🥰

謝謝老師的食譜,我照著老師的食譜做了兩次,小朋友跟老公都說很好吃。雖然沒有辦法像老師的這麼漂亮~邊緣都會裂開!😂但真的很好吃~ 謝謝老師的分享~

謝謝您製作了這款蛋糕,也謝謝您的家人都喜歡它😊每台烤箱溫度都有差異,溫度偏高容易造成蛋糕開裂,您可以嘗試略微調低烘烤溫度延長烘烤時間,或在蛋糕大概好像約摸可能即將要開裂的時候,把烤箱門開1/3,1-2秒後關上,也大概能改善開裂現象🙂

@@Bunny_Kitchen 老師午安 : 切達奶酪蛋糕口感及風味不同於日式輕乳酪蛋糕,尤其先水浴後取出水盤的作法真的有別於其他烘烤方式。 老師的配方都不甜膩,對於喜歡甜點又怕胖的我來說,很安心。 今年中秋終於盼到赴日求學及工作的兒子回台,疫情的關係2年多未見,媽媽我把想念、關心與愛都融入在甜點與美食裡。 等疫情解封可以赴日時,我會台日兩邊居住,屆時再分享日本的生活。 喜歡老師作甜點的步調,慢中有序、柔中有韻,幸福感油然而生,好感動也好感恩。♥♥♥♥♥ *可惜無法傳照片繳作業給老師看,這個蛋糕我烤得蠻漂亮的,沒有龜裂,好開心。

老師,我試過很多水浴法的方式,唯有跟著妳的水浴法我的蛋糕才成功。太開心了!不懂是烤箱的問題嗎?我家烤箱是那種小型烤箱,不過有上下火的。

您好,蛋糕成功與否,會和很多因素有關係呢,配料比例,翻拌手法,操作過程,烘烤時間和溫度等等,我使用的也是小烤箱,只有22L,連上下火都不能分開調節😅 真的非常高興看到您給我的留言,謝謝您將這個喜訊告訴我,好開心好開心呢~希望您和您的家人會喜歡它😘 歡迎有空常來坐哦~

我的焗爐120度焗到20分鐘轉130已經開始蛋糕面有裂痕 即降返120度再焗多20分鐘 棄置水盆再用110度,你的焗爐是大爐還是細爐呢?

想问下就是关掉烤炉15分钟后那个蛋糕不需要倒扣?直接脱模?

不需要倒扣哦,不是所有的蛋糕出爐後都要倒扣的,我是出爐後就脫模了,你也可以讓蛋糕在烤箱裡待到室溫再脫模🙂

出爐後又高回缩变矮是貼解?

您好,蛋糕出爐後輕微回縮是正常的,如果回縮太厲害有可能是沒有完全烤熟,通常蛋白消泡或打發不足,蛋糕糊翻拌過久造成消泡是蛋糕回縮比較常見的現象
