Recipe:
Ingredients:
3 pounds plate short rib; USDA Prime (not cut)
1 onion, minced
½ Asian pear
1 apple
4 cloves of garlic, peeled
½ cup pineapple, peeled
2 cups soy sauce (Kikkoman)
2 cups brown sugar
1 cup corn syrup or honey
¼ cup sea salt
¼ cup sake
¼ cup Mirin
10 cups water
Toppings:
¼ cup sesame oil
¼ cup honey powder
¼ cup sesame seeds
½ cup sliced scallions
Extra (optional):
Grilled King Oyster Mushrooms
Red Leaf Lettuce
Perilla Leaves
Chile Pepper
Roasted Garlic
Ssamjang (Korean Meat Condiment)
Pickled Daikon
Sesame seeds and scallions for garnish
Steps:
1. Puree all of the ingredients except for the topping ingredients and water. Stir water into the puree and marinade and pour over the beef. Place in the refrigerator and marinate for at least 24 hours.
2. Heat a grill pan over high heat and grill the beef until charred, about 5 minutes per side.

I’m from Troy, Alabama and I used to work with a Korean American soldier in Maryland and was soooo shocked when she told me she was from Alabama. I joked with her that hers must have been the only Korean family there lol. Moments like this remind me of how small our world is. Great video!! I love Korean food and when i was in Korea eating was my favorite thing to do lol 😂 😋

I agree and will go one step farther and say to keep the basic part of who you are as a person. I would love your mom, errr his mom. I'd probably love your mom too because I think she raised you well. 😁😁

I love that he takes so much pride in his culture and retains both sides through his cooking. As Asian Americans, we should never forget where we come from.

His mom refuses to learn English. That’s not ok. USA is also her home, her country too. I’m a first generation immigrant and when I took my oath to this country. I took it seriously. I want to be able to communicate with my countrymen and share my original cultures with them as well. Learning to speak English has no conflict with keeping your original culture.

Currently working as a chef in at a Korean BBQ restaurant, realising watching this and some other videos that everyone has a different Galbi marinade recipe. Really interesting stuff!

my water to soy ratio is 2 to 1. trust me on this, you need that saltiness especially if you add that fruit. 1/2 cup kikkoman soy to 1 cup water. also don't forget to add a TON of aromatics, such as the garlic, onion and green pepper.

Made it. Tweaked it a bit but generally used all ingredients. Meat completely fell apart after overnight. This is one of those 2 hour marinade no longer

There is a reason why people move to other countries - perhaps because of financial situations, better future for their children, or whatever the situation is, - - at least try to respect the language and the culture of the country. how long did you marinade it for? typically korean marinades that use asian pear/kiwi fruit don't marinade meat for too long as the acidity breaks down the meat much faster than usual. hope that might help

2days marination is way to long u lose protein n nutrients from meat due to acidity of marination

Someone mentioned their meat became soggy. Hard not too with all them enzymes from the pineapple and pears in there. Really dont know why he said to marinade for a couple days. These meat aren't cheap, and he potentially just ruin lots of meals.

I disagree with some of his mother’s point of view on culture. I’m a first generation immigrant. Although I agree that keeping your own culture is a form of respect, refusing to learn English while living in America is also a disrespect to your new country.

Those massiv amounts of pineapple, and then brine it "for days"? Um, doubt this guy really has professional training. The meat will be mush by then, those enzymes in the pineapple are way too strong 😳 Such a waste 😭

korean historically doesn't eat beef 🤣. 1. economy 2. religion beef eating is american influenced, american loved those beef and ham. don't forget the spam love that sparks budae jigae literally army stew (korean + americanize stew with spam)

I'm not aware of any widespread religion in Korea that banned the consumption of beef. Beef was mostly available to the upper class as most of the populace used cows for labor and were sometimes traded like currency. So yeah it was probably more economic than religion
