Head and Trotter soup:
Two heads
Eleven trotters
One onion
Three bay leaves
Half a lemon
Three cloves of garlic
For the seasoning:
Two tablespoons of butter
Two heaped tablespoons of flour
300 g yoghurt
Half a lemon
For topping:
Garlic
Vinegar
Chili Pepper
Preparation:
We clean the black parts on the trotter well, burn the hairs on fire. Then keep in cold water for 5 hours and wash them really well. Put them in a pot. Then add lemon, bay leaf, onion, garlic and water and when it starts to boil, we take the scum off. We boil it and salt it, we take the meat of the head and trotters into the pot, we mix yogurt and lemon juice in a bowl and mix them, as I showed in the video. We get some soup and pour it in the seasoning to have its temperature close to soup's, then we pour it into the pot and mix. It's enough to boil it once. Then your soup will be ready. Bon appetit!
