Fantastic looking brownies---no way I'd be able to leave them to cool for such a long time vs diving in as soon as they were just no longer screaming hot from the oven as the smell alone would surely drive me to madness, but still.

yes the parchment paper really helps or foil cause it like to stick to the pan LOOK AWESOME TO ME YUM > all it need was chocolate icing with grind pecans on the top Thanks for sharing this awesome recipe cheers

After a while, I figured out my own answer and couldn't believe I actually asked the question, but then, I never ever heard this term being used before. It was always 'punch down all the bubbles' or words to that effect. Of course one word like 'degas' sounds cooler but so so funny. I couldn't stop laughing.

Why is it that all recipes start with oiling the pan first? Does it make a difference if I oil the pan early or just before baking? Is it just for convenience's sake, so that you have it ready when you need it?

Alejandro, are there certain brands of chocolate for this recipe that you, particularly, like? It would be a shame to go through all the work and expense of making these brownies and then discover the chocolate one used was not a good fit for such a dish as this. I did check your blog and saw that you called out King Arthur flour (great choice!), so I hope you could do the same with the chocolate.

There are many great high-quality chocolates available now. I like using Scharffen Berger, Valrhona, or Callebaut chocolates. Any of these are great for great baked goods.

Using metal on a pan with that nonstick coating is going to ruin it. How can I get more of a "crackle top" on mine?

Hello Eugene, It is good to meet you. Welcome to the Just One Bite, Please? community. The pan I use has a special non-stick coating that can handle using a metal utensil on it. That said I still use care when using the tool on the pan. Less expensive pans tend to scratch off very easily. Make sure to whisk and beat the ingredients really well to get a shiny crackly top. The dark Unsweetened chocolate and cocoa powder off-set the sweetness of the sugar. Making for a happy taste buds and tummy!
