Elliott finds himself at Pasta Fresh, where they make Italian noodles of all shapes and sizes. E goes for their top seller and one of the most comforting noodle dishes of all time - spaghetti and meatballs.

THEY ARE SERIOUSLY WHATS LEFT OF AMAZING PEOPLE. IM A REGULAR AT PF AND LET ME JUST TELL YOU THEY HAVE ALWAYS TREATED ME LIKE FAMILY! ANTHONY AND HIS WIFE HAVE A WAY WITH PEOPLE AND THEY SHOW THEIR LOVE WITH FOOD. IM SO HAPPY THAT THIS PLACE IS RECOGNIZED FOR THE REALLY AUTHENTIC FOOD! IF YOU DONT SEE IT ASK FOR IT.

3 blocks from my house, Friday night pick up an order of spaghetti and meatballs, I eat Friday night and lunch Saturday easily, 12 bucks for that kind of quality is a steal.

Yes it is, but the meatballs are smaller than in America. The dish is called spaghetti alla chitarra con (le) pallottine. It's a specialty from the region of Abruzzo, east of Rome. In some parts of Italy, large meatballs are sometimes eaten together with pasta on festive occacions. However, a long time ago meat was very expensive in Italy and therefore it's safe to say spaghetti with meatballs was not an everyday dish anywhere in Italy.

@@joachimgronlund1064 I know where Abruzzo lives in Rome, pasta with meatballs in Italy is made in very few places, but above all you do not put the meatballs inside the pasta, you only use the sauce, then as a second you eat the meatballs, and all this at home, never in restaurants

It’s Pecorino Romano! Made from sheep’s milk. Locatella Pec Romano is sharper, fuller, more expensive and more robust than blander, milder run of the mill Parmesan. The cheese they’re using looks powdery because it’s machine grated. I’d go with Pecorino Romano over par any day!

coz homemade pasta will never be al dente like the dry pasta . especially homemade spaghetti which tend to overcook quickly also in the dry version

What do people exactly mean when they say "fresh pasta"? It is not fresh, it is grains which are completely dehydrated foods and have no life in them.

I think they are talking about the preparation being as close to being traditional but technically you are correct!
