Chicharrón and Guacamole
Ingredients
- 1kg (2.2 lb) pork belly with skin on
- 1 white onion
- 4 cloves garlic
- 20 peppercorns
- 2 bay leaves
- salt
- 2 kg (4.4 lb) pork lard
- 4 avocados
- 1 jalapeño pepper, finely diced
- small bunch coriander, finely sliced
- 1 lime
Method
1. Start by slicing the pork belly into roughly 1cm (0.4 inch) thick pieces. Place the slices in a large pot and cover with water.
2. Add half a white onion, 4 crushed garlic cloves, bay leaves, peppercorns, and a big pinch of salt to the water. Slowly simmer for 30 minutes.
3. Remove the pork from the water and place it on a wire rack to dry slightly for 10 minutes.
4. In a clean pot, add the pork lard and bring it up to temperature. Add the pork belly to the lard as it heats. Slowly cook the pork belly in the pork lard for 1 hour at 95°C (203°F).
5. After 1 hour, remove the pork belly from the lard and increase the temperature to 160-170°C (320-338°F).
6. Once the pork lard reaches the higher temperature, place the pork back into the lard for 5-6 minutes until it's golden brown and crispy.
7. Remove the chicharrón from the hot lard and place it on a wire rack, seasoning with salt immediately. (You can keep the pork lard and use it for other recipes. Cool it down and store it in your fridge until ready to use.)
Guacamole
1. While the pork is cooking in the lard for the first time, prepare the guacamole. In a bowl, add the avocados, half a finely diced white onion, finely sliced coriander, the juice of a lime, and a big pinch of salt. Mix well, but keep some texture in the avocado.
2. Serve the chicharrón with the guacamole on the side. Enjoy!

It's actually healthy. Animal fats aren't bad, he uses lard to deep fry. It's seed oils like vegetable oil, sunflower oil and rapeseed oil that cause heart problems, inflammation and obesity.

My father made chicharron for a living for over 50 yrs, here's a tip from the recently departed master: instead of boiling and frying, cook the pork in a little of heavily salted water on medium heat, it will render the fat and when the water evaporates lower the heat at let fry til golden. The result, a crispy and crumbly texture out of this world ❤❤

⁠@@JdT93_I’ve seen so many people putting sour cream or mayo, putting the avocado in a blender and leaving out the chiles. A traditional guacamole needs mashed avocados and chiles added, and sour cream and mayo shouldn’t be added because it’s supposed to be spicy. It isn’t rocket science, and yet some people can’t do it properly

I don't know what y'all bitching about him deep frying in lard. Animal fats are healthy, natural and have been consumed for thousands of years, unlike seed oils (rapeseed/ canola, vegetable, sunflower, soybean oil) which cause inflammation, heart problems and obesity.

That's what we here in Great Britain call Belly Draft of Pork, not cooked that way, though. Growing up in the 50s and 60s, my mom would cook the sliced belly draft of pork in the oven. She would dry off the slices of pork sprinkle, a light dusting of salt and pepper on both side place the slices into a shallow roasting pan and pop them into a pre heated gas oven gas mark 5. The belly pork would be served up wi5h mashed potato, some veg that was available depending on the time of year, strange how today all kinds of veg is available pretty much all year round. She would also make sage and onion stuffing to go with this dinner and my mum's gravy was to die for, some times she would ake onion gravy. This cut of meat was known for being a cheap cut, along with Breast of Lamb, I love roasted breast of lamb, with mashed potato's, mashed sweed, peas a thick lamb gravy and you can't forget the mint sauce, which was made from fresh mint from the garden, finely chopped mint leaves, put 4 teaspoons of sugar into a small dish along with brown malt vinegar stir until sugar has mostly gone add a drop of warm water to help the sugar dissolve then add in the finely chopped mint and taste, if the vinegar is too strong add a drop more water, the mint sauce is best made before you put the lamb in the oven. Mom always used the cheap cuts of meat, winter stews were made from neck of lamb, lambs liver with bacon mashed potato's peas and always onion gravy. Sausage were used in the making of toad in the hole. Sunday we would have roast beef which was cheaper than buying a chicken. Food back then was much better, and sadly all those cheap cuts of meat that allowed those on a low income eat well, are now so expensive, I'm so glad I grew up in a time when such meat was cheap and enjoyed my mom's cooking them and making fantastic food for all the family to enjoy.

These are just basic knife skills, nothing special. He isn’t some knife savant. The editing makes it seem like he is really fast at cutting stuff. Just start slow and use the knife in a pinch grip and claw when ever possible. Get the reps in and you will get quicker and quicker. And don’t use a slicer like Andy did to cut an avocado in hand.

Smaller dice . You can achieve the same results if you feather the onion thinner . You don’t need to cut across like that if your feathering is thin. This is was I do at work to get my cut size to 1/8 of an inch

It depends cause there's two different forms of it. The snack food form, the skin, and the one that's the meat. There's also the chicharrón en salsa which is the second option but less crunchy than prensado and covered in salsa (still really good).

Advice: for cutting onions , garlic, herbs anything you want minced just use a small blender that you can clean fast like a 600 nutribullet. So easy to clean, no fingers cut. or get a 1200 ml and mix everything together. Good for baby food too.

My grandfather used to do a dough made with pig grease and little bits of chicharrón. Also in train stations you can find people cooking a round bread(called tortilla but it's not like Mexican tortilla)with chicharrón with carbón

when i make guacamole sauce i always add some garlic, it gives an extra flavour that i love!
