I used to love when they served chicken ala king at the hospital I worked at. Using this recipe, I bumped it up a bit, and it is delicious!
1/4 c. butter or margarine
1/4 c. flour
1 tsp. salt
Dash of white pepper - I ended up adding a LOT more pepper
1 c. chicken broth
1 c. evaporated milk
1 10-oz. package of frozen peas and carrots, thawed and drained, optional
3-4 c. cooked chicken, diced (replace with your leftover turkey!)
I also added in:
1 c. of onions
1/2 c. mushrooms
3 Tbsp. pimientos
and about 1-1/2 tsp. of onion powder
Melt butter in skillet and saute your onions if you decide to add them. Blend in flour, salt and pepper. Slowly add the chicken stock, evaporated milk, peas, carrots, mushrooms, pimientos and chicken. Cook 4-5 minutes or until thickened. Serve hot. Yield: 4-6 servings.

Storing the sauce with a woks when adding the broth really helps prevent lumps. Can't wait to try this!

My high school daughter made this tonight...left out the onion, but kept the mushrooms. She couldn't believe how easy... I said congrats! You just made chicken a la king!! Thank you for bringing back this retro dish. Total comfort food.

It seems that no one is being taught to cook anymore, and everyone eats out or has fast food. It makes me sad. But there is still hope. Thanks for letting me know your daughter made this dish :)

This looks good. My mom made this with everything the same except with tuna sometimes and called it cream tuna. We had it over toast or biscuits or egg noodles. I gotta make this.

I cook this meal in a cast Iron skillet. When it's done I cover the top of the dish with a layer of biscuits and pop the skillet into the oven to cook the biscuits. then serve to my family. they enjoy this dish very much. and it's so quick and easy to make.

That looks so good. I haven't had this in a very long time. I always had it with pimentos in it. They give it a nice little zip! I am gonna make this if I can remember to do it!

Just finished making this for my husband and little ones and it is deeeelicious! It's one of those local faves that I grew up with as a kid but kinda forgot about it once I became an adult & moved out. I'm 33 now and this has just brought back so many memories. It was my grandfathers favorite dish. Prob cuz war time like u said..lol he used to live with us growing up and passed many years ago but I'm sitting her thinking of him now. Thank you for bringing this recipe back for me

Very interesting dish. I've never heard of chicken a la king. It looks very tasty though. It kind of reminded me of chicken pot pie stuffing.

Yes! I would eat chicken every single day. Scott is not a fan of it, unless it has a lot of flavor. Tonight I'm going to do the one right over to the side >> Oven fried bacon wrapped chicken .. it is good :)

Whisk can help with lumpy gravy. Me and gravy do not get along lol. I always have a hard time making it, but getting better at it. My BF makes it and he sometimes uses a whisk, or fork, or wooden spoon. I watch plenty of cooking vids and I see a lot of people use whisks! Nice vid! Happy Holidays!

Oh I LOVE ur channel...and cool accent...my kids are hapa so we enjoy all types of food from spam musubi to taco Tuesdays!! Lol! You can do Alii Mushroom . Slice and boil it first then add to Ala king save the broth and May add to the Roux gravey to thin out. I am going to make this , cause looks so yummy.

I've loved chicken ala king but haven't had it for ages. This looks like a great recipe, and I'm gonna have to whip up a batch. I've always had it served over biscuits, but rice would do just as well. It's all about a place to pile it that soaks up the gravy. LOL

My Mom used to make this for us when we were kids, Now that we are all adults, my siblings and I are making it ourselves, the funny thing is, (each of us with a little different twist), but we never knew what it was called, or if it even had a name , Thank you so much for posting this. NOW, I know that we were eating Chicken a la King.

so what is your twist!? Give up the secrets! I don't know if I told this during the recipe, but when I worked at a local hospital, this was my absolute favorite meal. So every time it was on the menu, I made sure to go to the cafe to have lunch with friends. It is just one of those comfort foods for me.

Hot roux & cold liquid = no lumps. If you pour the liquid in so slow like that it will be lumpy. If you pour all of the cold liquid in at once and use a whisk, you shouldn't have lumps. A good tip I once heard was even if you get some lumps, you can just pass the gravy through a strainer, of course that won't work too well if you have veggies in your gravy. 😁

Looks good, watching your video, it appears simple to make..... which is GOOD for me. my wife tells me it's my turn for "mess duty" tonight. So I'll be making this dish for dinner tonight. at this time, I'm thinking about cooking it up in a cast iron skillet, layering the top of the dish with biscuits, and popping it into the oven to cook the biscuits. wish me luck!!!

I've gotta say that it turned out pretty well. I took a few liberties with your recipe. I included celery and green onions in what I made. next time I cook this I think I'll include some green beans. wish I knew how to include a photo with this reply. I took a picture when it was done. The dish was beautiful, with the biscuits all golden brown on top of it. BTW, even our 14 year old went back for seconds. let me tell you that is a very high compliment in this household. that child is a very picky eater!!!!!

FitAnge S aw I know how that goes. And you'll start thinking you can see him out of the side of your eye occasionally. I had my boys 18 years (brothers--passed within months of each other) and I cried every day for three or four months and didn't replace them for 1.5 years. Now, I replace them almost immediately because it makes it a little easier on the heart for some reason. But then I find myself sad because they aren't the same, but they have their own specialness :)
