Welcome to our channel! In today's video, we're making an Irresistible Chimichurri Salmon Burger that is both easy to prepare and absolutely delicious. Fresh salmon is paired with the flavorful South American classic Chimichurri sauce that results in a flavor explosion! However, we didn't stop there! We added some southern classics like fried green tomatoes and homemade pimento cheese. It's like the South meets the South!

Ingredients
For the Chimichurri
4 cloves garlic
2 cups fresh parsley leaves, loosely packed
2 cups fresh cilantro leaves, loosely packed
1 teaspoon dried oregano
1 Fresno chili pepper, diced small
2 tablespoons red wine vinegar
Juice of 1 lemon
1/2 cup olive oil
Season to taste with salt and pepper
For the Salmon Burger
12-24 ounces fresh salmon filets (makes 2-4 burgers)
1 teaspoon whole grain or Dijon mustard
1 tablespoon mayonnaise
2 tablespoons chimichurri sauce
1/4 cup panko breadcrumbs
For the Pimento Cheese
2 cups shredded edam or mild cheddar cheese
2 tablespoons mayonnaise
4 oz. diced pimentos
2 oz. green chiles
1/2 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon cayenne
1/2 teaspoon Kosher salt
1/4 teaspoon black pepper
