Always a crowd please these chocolate chip cupcakes are tender and packed with chocolate flavor and the chocolate buttercream is AMAZING! The recipe makes 4 delicious cupcakes.
Ingredients:
1/3 cup granulated sugar
2 Tbsp canola oil or other light flavored oil
1 tsp vanilla
1 egg
1/4 cup sour cream or plain Greek yogurt.
1/2 cup all purpose flour
3 Tbsp unsweetened cocoa powder
1/2 tsp baking powder
1/8 tsp of salt.
1/3 cup mini chocolate chips, optional
Buttercream Frosting:
1/2 cup butter, salted and softened
1 1/2 cups powdered sugar
2 Tbsp unsweetened cocoa powder
1/2 tsp vanilla
1-2 Tbsp milk
Directions:
In a medium size bowl cream together butter, egg and sour cream with a hand mixer.
Add in dry ingredients and stir until just combined.
Add in chocolate chips if desired and stir to incorporate.
Line muffin tin with cupcake liners and fill with batter - will make 4 cupcakes.
Bake at 350 degrees F for 15-18 minutes or until a toothpick comes out clean (there may be some chocolate on it if using chocolate chips. Don't overbake!
Frosting:
In a medium size bowl combine butter, powdered sugar, vanilla and 1 Tbsp milk. Add additional milk as needed to get a nice smooth spreading consistency.
Frosting cupcakes once they are completely cool.
