This jam is as beautiful as it is delicious. All the flavors of the holiday season... cranberry, orange, pear, raspberry and warm spices topped off with a bit of Grand Marnier ~ YUM! Great on toast, pancakes, waffles, ice cream, cheesecake or used to glaze meat.
12 oz. package of fresh cranberries
Juice of 1 orange with water added to 1 cup
Zest of 1 orange
1 pear chopped
2 6 oz. packages of fresh raspberries (or about 2 cups frozen)
1/2 t. cinnamon
1/4 t. each cloves, nutmeg, all spice
~ 2 T Grand Marnier (optional)
4 c. sugar
1 package or 3 T. low or no sugar pectin
Process for 10 minutes in boiling water canner or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
