Claire Saffitz Makes Confetti Cake | Dessert Person. Get ready to party! And by party, we mean stay at home and be safe. But fortunately, you need no special occasion to make this delicious, celebratory, kid-friendly, and deeply nostalgic confetti cake. A tender white birthday cake studded with rainbow sprinkles and covered in smooth, tangy cream cheese frosting, it tastes like childhood (which is to say, better than the box). We took a hiatus but Claire and her crew are back with Season II of Dessert Person -- check out this first episode!

Ingredients:
Confetti Cake:
Butter for the pans
5 1/2 cups cake flour (23.3 oz/ 660g)
2 1/2 cups sugar (16.4 oz / 466g)
4 1/2 teaspoons baking powder (0.63 oz / 18g)
1 1/2 teaspoons Diamond Crystal kosher salt (0.16 oz / 5g)
3/4 teaspoon baking soda
3 sticks unsalted butter (12 oz / 340g), at room temperature
1 1/2 cups buttermilk (12.7 oz / 360g)
1/3 cup neutral oil, such as vegetable or grapeseed (2.6 oz / 75g)
3 large eggs (5.3 oz / 150g), at room temperature
6 large egg whites (7.4 oz / 210g), at room temperature
1 tablespoon vanilla extract
1/2 teaspoon almond extract (optional)
1/2 cup store-bought rainbow sprinkles (3.3 oz / 93g), plus more for decorating

when my grandma would make cook n serve chocolate pudding, she would always scorch the milk, so the pudding had this kind of nasty aftertaste to it. But honestly, some whipped cream would balance it out and I came to actually like the taste after a while :-)

Just wanted to say I made this and it was incredible!!!! It was honestly the best cake I have ever had, and knowing I made it myself felt so cool. I did use a simple buttercream recipe for the frosting instead (I don’t love creamcheese frosting) but the actual cake was so moist and lovely. Highly recommend!

The best part of of gourmet makes was Claire taking pride in finally making something delicious. I would love a video over a few weeks where we watch her develop a recipe so we can see the creative problem solving process.

I made this tonight, minus the frosting since I'll do that the day of the party and I'm so pleasantly surprised and proud of myself! Halving the recipe got complicated, but it baked beautifully! Two 9" cake pans baked in 25 minutes. At 15 minutes I switched their spots bc my oven has a hot corner, and 10 more minutes had them perfect and pretty even on top. I've never made a cake from scratch before, let alone this method (plus making cake flour and buttermilk), and I'm thrilled! Thank you!

that's part of what makes her cookbook really good - the recipes are a bit more wordy but you really understand WHY you're doing the thing. She also has a lot of great picture-rich tutorials on how to do basic tasks, like beating egg whites and creaming butter.

I honestly love how real Claire is in these videos (forgetting to preheat the oven and prepare the cake tins)! She even made a mistake that we all might make at home and showed us how to remedy it! That's a real win in my book :)

Made this today for my mother-in-law's 50th birthday. It was quirky and fun but the cake was delicious and a big hit. I never would have thought to do a grown up funfetti if it wasn't Claire that brought it up. I loved the almond extract tip. I also took you up on the milk soak because I only had small pans and I slightly overbaked. Thanks for all your hard work and hang in there for the brighter days to come. Hope Felix feels better.

I actually mixed this whole recipe and poured it into a sheet pan and was able to create a perfect 2-layer half sheet cake for a party! Well, mostly perfect....I didn't level the batter out perfectly in one corner of the sheet pan, so that part ended up being a little thin, but it was perfect tasting and a huge hit at the party I brought it to! I pulled the sheet out after about 35 minutes and it was great! This recipe perfectly fit a standard sheet pan (I was a bit worried if I'd have to make recipe adjustments before I popped it in), which was a big relief because I wanted to make a confetti cake to feed a bunch of people, but the circle cake (while beautiful) is just a bit harder to parse to for a crowd. Thanks for the recipe Claire!
