This gorgeous lamb tagine recipe produced melt-in-your-mouth results every time. Jamie takes some classic Moroccan flavours and techniques the shows you every step of the way plus how to finish it off beautifully. And the best thing about tagine cooking is there is minimal washing up - brilliant.

This was simply fantastic. The awesome part of this recipe (and most cooking in general) is that you can play around with the ingredients, qtys, all that good stuff and it still will turn out great. Don't be afraid of this recipe. Pretty much fool proof!

So just in case anyone doesn't have a tagine yet but would still love to try this recipe: I just cooked this in a simple coated pan with a glass cover from Ikea. It worked absolutely fine. I will still buy myself a tagine dish, but it worked perfectly well and the food was DELICIOUS! The meat was sooo tender and all the spices, herbs and the yoghurt are just so fine together..I cooks it also 2,5 hours, I set the stove to a quite low level. Jamie, you're a genius!

I think a Dutch oven would work too. But I just bought myself a Tagine. This is why I am here, watching tagine recipes 🤤

I cooked a Tangia (quite similar to Tagine) myself inspired by this video. It's super easy to make it at home. The taste is unique, a real impression for those who never tried North African food.

I remember for my anniversary my husband took me to a place called comtoir in Manchester and I had a lamb maqlooba tagine and it was amazing and so filling and looked exactly how Jamie made it :)

Back in the days when Jamie Oliver could still get away with saying Ras El Hanout and Garam Masala are the same thing. I'm sure they both make it taste great though!

That's gotta be cooked. I have to try that. At the moment using colman sachets for cooking instructions. But Next going to be cooking Jamie Oliver ingredients. I hate cooking. My cooking is never like other peoples. But this Jamie Oliver channel is going to be a big help. Glad you are on youtube.

Hope Jamie won't mind me answering this one, but I have actually done something similar to this in the oven using a casserole dish (with the lid on too). It turned out beautiful and my Hubby loved it. If you are cooking for more people, I'm sure you can do it with those big deep oven pans and put tin foil on top as the lid, if it doesn't have a lid. Hope this helps you out. Lee xx

Jamie Oliver --- Wed.,Dec.2,2015 - Here in L. A., Calif. I went looking for Lamb and these people seems do not consume lamb at all. Finally I found in a market in Glendale, but they did have legs of lambs, to me, they are big and I bought only 2. that was probably one month ago or one and a half month ago. they are in the fridge, but I don't know how to do it. I am a widower, 4 days ago I had my birthday, I am 75 years old now. my wife passed away 6 years ago and she was a pretty good cook, I would say excellent cook she was. Our sons got married and have children and live in other cities far away, I live alone and I am learning how to cook. But how to prepare those legs of lamb? Your lamb shanks that you prepared look to me delicious after you had them cooked I exclaimed Oh! This guy is a genius when cooking!!!. Sicerely, your friend and friend of all. +ANDADOLAGER Hey this is probably too late and they will have gone off, but I like to do Lamb leg roasts sometimes for Sunday dinners. My Mum isn't around either so I cook for me and my Dad. Just stick it in the oven with some cranberry juice, salt and pepper, and cook until tender (depends on size). Then serve it with mint sauce. It'll be a lot of food for one, but I use the leftovers in sandwiches. Hope that's a little bit helpful! :)

Hi Jamie!!! I love all your lamb recipes. I am a very big meatlover and lamb is my favorite peice of meat!!! Unfortunately, lamb is very expensive here.... Your dish seemed so tasty. My father is Iranian and they have the same tradition i think.... eating yoghurt with meats and rice and stuff.... I think so.... Me, I am more Swedish. I love good old fashioned soured milk served with fruits, granola or corn flakes. But I love stuff like tzatziki and stuff. You can do a lot of tasty stuff with for exmple greek yoghurt. Thanks for sharing this amazing idea of a lamb dish, inspired by North African food!! I would love to try it one day!!! Big love, from me in Sweden.

in the uk the whole plant including the leaves, is called coriander, in the US the leaves are called cilantro, and the seeds coriander

Nice dish Jamie :) But a question... is there a way to do this on an induction cooker? I mean the Tangine won't work but can I put it on a pan without having to worry about a dissaster?

I don’t own a tajine so I made this in a Dutch oven and used figs instead of apricot... Turned out really tasty, too!

Garam masala is South Asian, it's not the same as North African ras el hanout! Dunno why he said that. Food looks tasty anyway, I love Jamie :-)

On the Wikipedia page for the tagine, they suggest using a "diffuser", a piece of aluminium, between the gas and the tagine, so it should be possible to use a circular piece of iron or steel similarly to transfer the heat on an induction cooker.

I've been informed that Garam Masala is a substitute for Ras al Hanout - and also, already contains cumin and coriander, so no need to add extra - unless you want extra

That my brother was a Bad Ass cook.my EX's Grandmother made some killer ass lamb shanks Itallian style and they were totally awesome.wish I would have got her recipe,but now I have yours and this a bit different ,but I can see all the Love and the flavors you put into it..Totally Awesome, my Girl would totally Love this.what is that special pot called and where can I get one ??? this a must do for me ..Thank You..thumbs up and subscribed,Iam Cris

Cris Workizer google Tagine. You'll be able to find them on eBay, Amazon etc. Definitely worth it!
