Lamb tagine recipe. Moroccan tagine is a stew, classically incorporates savory and sweet ingredients with rich sauce. Today I will make lamb tagine with couscous. For my Moroccan tagine I am using 3.5lb leg of lamb.
Just follow my lamb tagine recipe and enjoy.
Lamb Tagine Ingredients:
3.5lb leg of lamb
Lamb Marinade (marinate your lamb for 4 hours or overnight):
10 saffron threads (cover with 2 tbsp hot water)
1 tsp cumin
1 tsp cinnamon
1 tsp paprika
1 tsp coriander
¼ tsp nutmeg
½ tsp ground cloves
½ tsp turmeric
Black pepper and salt
Olive oil
3 carrots
2 onions
12 dry apricots
4 cloves garlic
1 ½ tbsp ginger
1 cup diced tomatoes
1 lemon zest
1 tbsp honey
Cilantro stems
1 cup chickpeas (soak them in warm water overnight)
3 cups chicken stock
2 Ceylon cinnamon sticks
½ cup almond slivers
Couscous (cooking time 15 min):
2.5 cups Moroccan couscous
3.5 cups chicken stock
1 cup dry cranberries
Olive oil
Black pepper

As a Moroccan, I really appreciate when people try to make our dishes so thank you! However, this is no lamb tagine, this is a stew over couscous. Tagines are made in a... suspense....Tagine pot! no carrots, no lemon zest, no tomato, preserved lemon is used in exclusively savory dishes not the sweet ones. We eat tagines with bread and never over couscous.

I need to get one Tagine. Mine broke. But you can definitely use Tagine or Dutch oven.

This is the most authentic one I saw so far. I would add some Ras el Hanout spices to this, and some preserved lemons (very salty). Looks delicious and authentic. Thanks for a great recipe, Lenny! Please consider no music - I had to turn the sound off to save my ears. This continuous music noise hurts the ears. Silence is golden and much more relaxing. Music irritates me to the point of wanting to strangle someone. Do not add music to any cooking video or pretty much any video!

@@LoungingwithLenny Well... in a tajine dish? I'm sure there is a reason it kept its shape and form for so long. Also, what you did is more of a classic (french) cuisine approach, I don't think they put all of that technique while doing it. ;)

Marinating meat with salt means it would dry out before you even start cooking.

As a Moroccan, I want to commend you for trying to recreate a Tagine. I have to respectfully say that you missed the mark. This is more like a stew than a Moroccan Tagine. Also, cooking couscous like that is a criminal offense aside from the fact that you eat a Tagine with bread. You made a good looking dish but it is not a Tagine. Give a different name and all is good.

I’m making a lamb/ chicken tagine soon for around 8 people. I was going to serves bulgar wheat with it, with some raisins and chickpeas?probably not authentic, was was also going to serve flatbread with it too. As regards the cuts of meat, I wanted to use chicken breast and thighs and lamb neck or shank, slow cooked ?

hhh..couscous is international nowadays ..Historically speaking it started in Morocco since the Almohad rule or even before and now thanks to social media it's everywhere @@LoungingwithLenny..It belongs to people who know or learn to do it by seeing how Moroccan chiefs make it

Omg, again another Moroccan Lamb Tagine made with Couscous. Where is Tagine here? I don't see it hahahhaha. Please correct your title it is very deceiving and wrong. You can still call it Moroccan cuz the spices are the ones we use in Morocco but please do not call it Tagine. Call it Moroccan couscous with Lamb Pleaaaaaaasssssseeeeeeeee. We take pride in our culinary and we take it personally, it is our culture.

What's the point of using tagine if you're gonna cook everything in another pot first? It's not convenient and not a good idea since over cooked food is not healthy.

I think it's a great idea to show people how to do this wonderful dish in an ordinary pot. Let's face it, most of us don't have a traditional tagine, and those that have purchased a modern one have probably only used it once or twice!
