I’m thinking in his newer videos he probably records audio while filming, but then doesn’t use that recorded audio in the final video. I think he records new audio for the final video ~ with a better mic in a good sound space. So, not only is Chef John our favorite whiz in the kitchen ~ he’s fabulous at post production too. ( All joking aside, a lot goes into these videos 🙂 ) Thank you Chef John !

THANK YOU for giving the salt to meat ratio. So many recipes call for "salt to taste" which is horse crap because it's not like you can add salt to the raw mix and then taste it! Chef John is the best!

Chef John, greetings. I have a small mod that makes a big difference. Get two or three dehydrated guadillo peppers. Reconstitute them in the beef broth that will be used for the mushroom gravy. Then add them to the food processor with the other veggies instead of a bell pepper. This gives the meat and gravy a really nice, earthy, complex flavor.

Since you are a meatloaf conneseur, I thought you might like to hear about the DadRimmer Meatloaf. It is basically 2 lbs. of 80/20 Ground Chuck, 1 Cup of Old-Fashion Oats, a finely chopped (medium or larger) Onion, 2 tsp. of Garlic Salt, 1 tsp. Pepper, and 2 Eggs. I cook it in a teflon-coated split loaf pan (so that the excess grease drains out). The resulting very basic meatloaf is very teasty, as the oatmeal absorbs the meat and onion juices. I thought you might enjoy experimenting oatmeal meatloaf.

Wow, ancient video but it has legs. I made the BEST meatloaf I ever had, using this and the prison meatloaf as a coach. I think it was the glaze that did it. The sugar in the glaze is not that noticeable but it does amazing things to the final meatloaf. I had to use leeks and a shallot (because I have an issue with onions and have someone with a garlic allergy in the house I have fallen in love with leeks). C I mixed a pound of grass fed organic ground beef and pork. I used 4 slices of gluten free happy camper bread that I chopped up and dried the day before. And because I needed more to make up a cup of breadcrumbs I added instant potato flakes (I know! Who knew?). Everything was organic. The rest was the same as Chef's but I had to add a little ketchup and mustard to the mix. IFashioned it into two small loaves - one for tonight, one for tomorrow night. It is on the menu in my house from now on. (I know, you said no one could make a bad meatloaf but seriously...yes they can!). Now I can come back and read my post next time if I forget how I did it, lol

There are other flours: potato, rye, rice. Try one of those. The bread crumbs (or other flour type) help keep the moisture in.

'Worcestershire sauce' is pronounces "wuster-shur" as in the colloquial pronunciation of the English city Worcestershire. If your still struggling just call it 'Lea & Perrin's sauce'. Anyways, great recipes!

Well that's something different. Almost every townsmen in Britain have their own local variation on pronunciation depending on where your accsent comes from. Sunderland = Sundrlund, Bradford = Bratfud, Newcastle= Nuwookassal, Glasgow = Galzgee, Yorkshire = Yorkshur, Birmingham = Burrming-gum. Weird isn't it?

That’s a meatloaf glaze? I just combine 1/2 cup each ketchup and barbecue sauce with 2 tbsp of teriyaki sauce I also imagine that you can use this as dipping sauce for chicken

Hi Chef John. Great recipes and this is now 17 years old so I won’t hold my breath for a response. But, your ingredients show 2 tablespoons olive oil (plus a little more for greasing the dish). However, where is the oil used in your video? Do you sauté the vegetables by any chance? They do look a bit cooked when you add them to your beef.
