2 Tablespoons oil
1 onion chopped
2 tablespoons minced garlic
2 tablespoons ginger powder
2 teaspoons curry powder
1/2 teaspoons cumin
1/2 teaspoons turmeric
Salt and pepper to taste
1 can diced or crushed tomatoes
3 cups water
1 can coconut milk

I have an identical pot and I use a silicone mat in the bottom which I made by cutting a circle from a dollar store baking mat and several small circles which I use if I'm using my larger canning kettle. Thin enough to store easily under a stack of pots in my drawer.

I bought a silicone mat by mistake as a burner cover for an induction cooktop. I ended up using it A LOT! It is great for pulling canning jars out of the canner to put on the counter top. It acts like a cushion if the jar slips. It also keeps the jars from suffering temperature shock from cold stone countertops. It is also great for gluing projects as it doesn’t want to stick. I might look for one to cut down to put in my pots for canning your idea is very clever.

Love your channel...I am 68 years old and have been living alone for quite a while -- took up canning, cooking, and gardening to increase my self sufficiency. Having said that, I have been 'canning for one' almost from the start! The notion of canning leftovers popped up almost immediately! Something I have learned from Chef Jean Pierre's channel, is that gee -- or clarified butter -- has the highest smoke point of the most common cooking oils making it a great alternative to seed oils for those that are seeking to limit seed oil intake. It also retains the butter flavor. Thanks for the video!

I’ve just found your channel. So so glad I did! ❤ I’m from UK and canning isn’t really a thing here. All the channels I’ve seen are of homestead type families, which I can’t relate to. Just a tip, use the back of your knife to scrap things from your chopping boards. It protects the blade of the knife and keeps it sharper longer

This is a great idea for foods that someone alone would like to have. so, like my husband does not really like chicken noodle soup like that, but I do. I can make a small batch for me, or I can can something he likes that I don't. cute idea thanks for this.

Make some fire cider for your cold, it will cure you and your family in no time. I give it to my daughter at the first sign of a cold coming on and the fire cider kicks the nasty germs away over night. 😁

You have been following the Mennonites canning method on water bathing. I have been watching (Homesteading With The Zimmermans), she grew up Mennonite and her water bath method is to fill the water only up to the neck of the jar not over top. What is your thought on this method?

Neck canning is very common in amish and Mennonite communities. I personally am fine with it.😊❤️

This is really good for me to see small batch canning like this. It’s just me and my middle son at home now and I don’t want to have huge canner going all the time and this means I can do smaller amounts of food now… but big amounts are still good lol❤

Wow! I just saw your channel last night! You are Amazing! Love your channel and you are a breath of fresh air! I have grown up with my mom canning and my mother in law and sister in laws.. I have been canning for 30 years + and with all the craziness in the world right now and the ridiculously expensive groceries and meat… I have been wanting to can meat! I only have a regular canner .. no Pressure canner.. I water bathed two whole chickens the other day… looks so nice in the jar and would like to try meat.. and I have people telling me that it is not safe and I need a pressure canner .. I say… I have grown up with my mom canning meat and we are all fine… Anyways I was just about to order a Pressure canner THEN miraculously… Thank you Lord and Angels… saw your channel… I have been watching all your videos… thank you for instilling my confidence for Water Bath now I will definitely be trying meat and potatoes etc! Absolutely LOVE you! Thank you… And yes I have seen comments about people asking you to make a cookbook… I would LOVE to have one also! Thank you… God Bless ❤❤🙏🙏

It will only be hot if you use hot curry powder. Use mild and you’ll get the flavor but not the heat.

I thank you for your channel - I love it. I would love to see a compare video. Do the Dahl waterbath for 45 min VS the 2 hours - wait a year - and test both. I am so convinced that we are just killing our food nutrients with over processing. Just my thought. I love your work. Thank you

She has a 3 part series on how the Amish water bath everything still. That’s all my mother did was water bath. Got a little steamy as there wasn’t any such thing as a range hood back then 😄 I believe over the years all these NEW regulations came as a money making scheme. Like the TV’s. In 1971 Mom n Dad got our first coloured TV, I still had that TV and when the first Nintendo came out I put it in the basement for the boys to play the games on and bought a new tv for upstairs .. then came Super Nintendo, then play station and I had a new TV again for upstairs. Two years later, another TV. 😡. But the one from 1971 was STILL going 👍. They LASTED long and manufactures wasn’t making money so they got sloppy in the making - The cost of pressure canners are unreal - they say It’s time saving , well ok, but today’s world is just weird with the time saving appliances so to speak and ppl are NOT too busy - they think scrolling on phones and laptops IS a must 😄 ,, water bath canning takes more attention by needing to watch the water level and longer boil time but I think much safer for everyone and everything - I seen a pressure canner explode at a friends house while having lunch, her mother was canning so just made us kids Sandwiches to hurry along getting us back outside to play. There was a weird noise, her mom turned to look at the stove, started over towards it and BANG. The cover hit the ceiling and glass went everywhere, and the contents of the jars were all over the place.

Why waterbath for 2 hours and not 3? Is it because it has already boiled for about an hour? I canned my first ever dinner on a jar yesterday, because if you. Thank you 😊 (I've read up on botulism, since we don't have pressure canners in Norway. I just wanted to mention that botulism toxines are destroyed if you boil the food for 10 minutes before serving)

Hi there. I really like your videos. I am a prepper working on ways to preserve foods. I have done some canning yet I am interested in water bath canning. I have an idea you may like for one of your videos. Do some basic food items for a possible emergency situation. Such as some basic foods, like beans, meats, potatoes, certian thngs that folks can get in bulk because they are inexspensive. A video about canning for prepping and emergency situations. Title it as such. You may increase your subs and views while teaching us guys how to do this. I think that there are many many guys who would totally love learning this if it relates to them prepparing to take care of their families in the event of emergencies, natural disaters, economic collapse.

Hi, I love your channel and everything you have shown to date...you should check out "Homesteading with the Zimmermans"...apparently, the Mennonites in her area put water up to the neck and not cover the entire jar and they don't really follow a timer or anything. They just estimate how long would it take to heat up the center of the jar to a certain temperature. I thought I would share this because it totally made sense to me what she was saying. I don't recall her saying anything about meat.

Hi. I'm new to your channel and have never canned anything yet. I'm basically just watching videos to get a bit of understanding on how it works. Does PH(acidity especially) play a part in how well the food is preserved? I'm interested in canning peas and meat eventually but keep seeing mentions of acidity. Also people keep saying you must follow a standard recipe to get success. I really hope I get a response because I'm really eager to learn.

Yes it matters low acid food must be pressure canned. I would not risk this recipe. It’s a good way to get botulism.

And at 72 yrs. old with a lot of experience in this, GO FOR IT. There is no meat in this recipe, MNO concern for botulism with canningvthis long. Why would someone stalk and put down someone else's positive and delicious efforts? I'm making this deliciousness now myself and will waterbath leftovers. AMISH PEOPLE USE WATERBATH FOR EVEN MEATS. Do your own research and go with your own gut.

I’ve only done tomato juice cocktail (homemade V-8) in 1/2 gallon jars. My vintage Kerr canning book says this: For fruits in 1/2 gallon jars add 10 minutes. For vegetables and meats increase time by 20% over times given for quarts. Hope this helps!

I have a question about beef stew. I just made a pot of beef stew and the stew is thick not quite gravy but close and that was made by taking the stew meat and coating it in flour and browning it then when I add the other ingredients and water. I've heard you can't can anything with thickeners in it? Is that true and when you can beef stew can you can the end product or just the ingredients?

I heard that too. When I first started canning I made chicken and dumplings. Then I found out you can't can flowers so I stuck them in the refrigerato. Three years later they were still good? So I don't know.

IMO, add any cooked meat you want as you're reheating or to the Dahl to serve right away. If you preserve meat in jars, add another hour canning time to 3 hrs. I'm already adding chicken to this deliciousness! 😊

I will be adding meat to mine and up the time to meat times so water bathe is 3 hours and pc would be 90 for pints

How do I determine if foods should be a 2 hour or a 3 hour water bath time? I thought anytime we water bath low acid foods it is a 3 hour processing time.

Two ways: first, use the time of the ingredient with the longest duration. Second, some people add lemon juice to reduce the time by one hour. I don’t like adding the vinegar personally. The waterbath times are found in older canning books.

Thanks @Junkinsally! I want to can a butternut squash soup recipe that has coconut milk and chicken stock in it ( plus onions, garlic, and butternut squash), but I think the longest times would be for either the coconut milk or the chicken stock. Would that be 2 or 3 hrs do you think?

Do you ever find that when your water Bath Canning it takes your glass top stove a little bit of more effort to heat up your teapot? I feel like mine struggles to keep both up to heat.

I watch other canner and some do use glass tops but that exact issue is why it's not recommended. You could try a propane burner so you wouldn't need to worry about steady Temps and/or cracking the glass top.derch canning on glass tops stoves and you may find some better advice

I just looked up turnips in my vintage Kerr canning book and it says the following. Wash, peel, slice or cube. Precook 5 minutes, then pack. Water bath for 90 minutes(hour and 1/2). This would be a “hot pack” with hot jars, hot product and then into hot water in the canner.

I think the Amish said the size didn't matter it was 3 hrs with meat 2 hrs everything else.

Probably wouldn’t hold up well for that long. 6-1year for optimal taste.

A lot depends on how you store it. A long time in a cool, dark place. If the jar is still sealed it's generally still good. Then there's always the smell test.

It's not recommended, but it's always been done in a water bath for 3 hours.

@@LindaYoung-nw4xl was thinking of adding a little vinegar a doing water bath. but have no idea how much to add or if it would reduce the bath time. was also thinking of trying to add a jalapeno to a couple and then try it a few days after

She is showing how you can preserve smaller amount. Either for a 1 or 2 person household or if you don’t have enough to fill up a big waterbath pot.

We think it's a play on make it or make do meaning something about do what you can with what you have or it could be make it as the title and then make ..... leading into the title of th video. I'm new to the channel but it was puzzling to me also and I guess that works because we're talking about it 😄
