in the Philippines the juice is actually not taken from the matured fruit but from the flower, we dont use yeast ,sugar or any addetives.and it taste so good it is sweet and not too strong

I'm from Sri Lanka. This video is great sir. We dont use plastic containers to make wine. Traditionally we use clay pot and cover the top with clean cloth without using air lock. We add lime juice 25ml to 50ml. Also you can add half tea spoon of smashed pepper for more spicy taste. One of my aunt said that she add 100ml to 150ml brandy when she make this wine. Also you can use coconut or king coconut water to make this wine. Doing variations is as per your choice

This looks good, I really like coconut flavor, the yeast looked liked the ale type for fermentation. So less spices for more coconut flavor.

Room temperature 👍🏼 You have to wait that the airlock stops doing baubles 😉 when stops the wine is ready

I have two questions as I have started making wine based on your videos. 1. I am making wine from store bought juice. I see there are additives, still the fermentation is active after a week. Is this fine or will there be any problem in this process? 2. I see some jelly like sediment in apple wine, is it normal. In this bottle too, the fermentation is very active after one week.

I am not able to buy a airlock. So keeping the closed open with just enough gap to let the CO2 pass out. It is continuously fizzing, and I hope oxygen cannot go inside.

Hi, I'm from Sri Lanka. I also made king coconut wine. I was able to get 11% ABV using bread yeast. We used to add caramelized sugar after the fermentation, but you add it before fermentation. Next time I will try your method.

since you said the spices were too strong i made this(for 3.8 liters) using 2 cloves, 1 cinnamon stick(might be better to use 2, i love cinnamon), 2 limes beause the ones i found didnt have a lot of juice, and 3 cardamon pods. it turned out pretty good. but the lime gave it a bit of a bitter taste, i backsweetened it and reduced the bitterness a lot. next time i will use lime juice and lime zest, but not the white part. all in all it was good, and i think i'll make it again when i can get more fresh coconut water.

i'm procuring the spices(cant find cardamon here) and once my fermenters are available i will definitely try this. lots of coconuts in puerto rico. not once did i think i could make wine out of them. we make several different coconut candies, coconut soda, coconut water, rum infused with coconut, coconut cream, an alcoholic coconut beverage called "coquito", which includes rum....but i have never seen coconut wine here. i will use half the cardamon, cinnamon and cloves you used. i also dont like too strong spices. will let you know how it turns out.

I've tried sake simple, no to awful, sweet yes.... Half liter.... Also 15 liters only Cranberry/ pom with grape hints....not bad, i used egg shell clearing and worked very well...I like your video keep ideas offering viewers

cuoredicioccolato i thought so but I’m wondering what you used to seal it? I’m guessing you used silicone but I’m thinking the chemicals may be bad for brewing. Again, love your videos. I’ve never tried brewing until lockdown happened in Thailand and I needed to learn a hobby to keep my sanity.

I don’t have any recollection of seeing, reading or hearing of the king coconut until now. I’ve looked it up and now I know it’s a sweeter type of coconut among other endogenous factors from Sri Lanka.

Made this as a Christmas present. When the bottle was opened, it shot up all the way to the roof. Any way to prevent this buildup of pressure, but also keeping it airtight?

You should wait that the fermentation is done completely and after adds only maximum 8g of sugar per liter directly in the bottle

what was the air temperature where the fermentation took place? Where I am its between 28-38C ddepending on season and day/night

Dont have one nor do I have ac. So based on your temp, the tropical temperatures here will be ok for the coconut wine fermentation over such a long period.
