Hey there! I can't really argue with your statement, which is also why the video is called "Coffee tools you want but you don't need". Of course there are people profiting of these kind of tools and therefore marketing it, as this is the case in most industries. Also at the end of the episode I include that these tools, if at all, are only rarely used at coffee shops. Most of these tools are more aimed a home baristas that have plenty of time per espresso to use them. But also with commercial grade equipment you usually get better distribution in your portafilter and less clumps compared to a household grinder. Therefore for home users it might actually make more sense to use something like a WDT tool or leveler, to have a better distribution in the portafilter to not have channeling. Because even if tamped correctly, an air pocket could lead to channeling. I have been working in the coffee industry for over 9 years now and of course seen a lot of development in this time. I have also been a little skeptical with every new process that's been introduced, but some of them make sense and some don't. For example the leveler is something that's used a lot nowadays, even in coffee shops and when used with a bottomless portafilter you can actually really see the difference in consistency of the extraction. And working at a coffee shop, the thing you aim for is providing consistently outstanding quality. 😊 But at the end of the day, I think everyone can do as they please and have their own opinions.
