I wanted to make and try this traditional Irish dish....Colcannon. Is this a traditional side dish for you? More popular with Halloween than St Patrick's Day, but I wanted to give it a try to see just how I like it. What do you think my answer will be?
With just a few simple ingredients, this may or may not be a dish for your table!
Recipe:
2 lbs. Potatoes (mashed)
4 cups Cabbage (diced)
4 Green Onions1/2 cup Milk
1 stick butter (total use)
Salt & Pepper to taste
Cook potatoes and mash with 1 or 2 tbsp butter.
Dice cabbage and boil, 5-10 min until tender, then drain
heat 2 tbsp butter and pepper (to taste) in skillet. Cook cabbage until flavors meld together. *Do not brown.
Add milk, salt and rest of butter to pan along with 4 thinly sliced green onions. Cook for 5 minutes to allow flavors to meld together.
Remove from heat, stir in mashed potatoes and cooked cabbage. Mix well and serve.
Recipe is adaptable and you can add ham or bacon for great flavor. You can also add garlic or cheese.
Colcannon is a traditional Irish dish that is associated with Halloween in Ireland. It is tradition to hide small tokens or coins inside the dish for Halloween festivities, predicting fortune or luck for the person who finds them.
