I just made it today for the first time and Honestly it's not even hard. It's just a lot of waiting so I was just watching videos while it cooked. I'd say baking is way more of long process and that's why I tapped out with it.

Here's how I make it 2 chuck roast cuts or similarly big and not too fatty cuts of meat. 1 whole yellow onion 4 Chiles guajillos 3-5 Chile de arbol (more if you want it spicy) 2 Ancho chiles 2-3 cloves of garlic 4 laurel leaves Ground or dried cumin Little bit of salt (you can add more later if needed) Then broil for 3-4 hours or overnight on low. After the meat is pull apart tender take it out and let it cool down a bit. Take the rest of the ingredients in the broth and blend them with a little bit of the broth. (You will have a good amount of leftover broth, you can use this to make soups or consome) Pull apart or cut up the meat, I prefer to cut since it won't get stuck in your mouth. Take what you blended up and put it in a separate pot along with the shredded meat, then bring it to a boil for a few minutes and add more broth if needed. Then you're done! Now just take some tortillas and use oil or some of the broth and fry them up on a griddle or pan, add some mozzarella or quesillo on the tortilla and you have yourself birria/barbacoa tacos. Don't forget to top with diced onion and cilantro as well as your salsa of choice.
