Dad is from Michoacan and he sells carnitas for party’s and events. His always comes out top tier. He uses slices of oranges instead of lemon or lime like you did. Orange is sweet and gives it a delicious taste at the end

Tip from a Mexican: Don’t put oil on your ingredients for the salsa, and if possible, char them in a grill or on a comal instead. You really want that charred roasted flavor

I like that charred roasted flavor in my salsa too, but a lot of authentic Mexican salsas are seared on the stove with oil, it still chars with the oil too

@@trinidad510 I guess it depends on which part of Mexico then. But none of my family has ever put oil anywhere near their salsa’s. The only time I ever do is when I’m making enchiladas. After roasting, I blend up all the ingredients and pour into a pot of hot canola oil and “fry” the salsa.

@@DarkClassicGamer ~ If you live in a city with a Mexican market you can purchase lard there. It’s much better than the bricks you get where the shortening is sold. Some people were saying in the comments that you can use oil but, it’s just not the same. Hope this helps.

Not sure for this one specifically, but you can check the internet for a recipe. It's a very common dish here in Mexico. I warn you there's a lot of variations, so just choose one that you like and don't worry about how "pure" or "original" they claim to be; everyone does it differently

Oh, I forgot. For the tortillas you can use a flat frying pan and just flip them as if they were pancakes when they rise if you don't have an oven for it. It's closer to the traditional way that uses a "comal"

At least here in Baja California, we do make carnitas like that. The way you described it as crunchy and fried makes me think of chicharrón rather than carnitas which is still fucking delicious ofc, but when I think of carnitas, it is pulled pork cooked with lard and served with white onion, cilantro and red or green salsa. Also red rice and guacamole. And we actually use corn tortilla for tacos unlike Papa here who used tortilla de harina which we usally use for burritos or quesadillas only

It may actually have influenced us. I know that the region where I live in Mexico has received a lot of polonians, Romanian, etc. for centuries and that an hour or so from my city a lot of french established a couple of centuries back.😊

Start with just the core of the recipe. Cook pork shoulder in fat on low heat until tender, then brown the pork under the broiler. Serve with whatever carb you got. That's the essence of this dish.

Basically you should get lard but oil can do (but it won’t taste as good till you reuse it a few times). Then get pork butt (pork shoulder will work, but it won’t fall apart as well and can have excess fat that needs to be removed sometimes) and cube it into a similar size as seen here, about 2-3 inch cubes. Get an orange or two and quarter or half them and juice them and add them in, a single cassia cinnamon stick (Mexican cinnamon sticks), onions quartered or tough chopped and add that in the same dish as the pork and lard. Add in some bay leaves. I’d recommend seasoning the pork generously with salt and nothing else. Bring the meat to a pretty fast simmer on the stovetop then put in the oven at 300 for at least 3 hours. At this point it will be cooked but check for tenderness. If it’s easy to shred then pull it. Shred it with two forks (or however you like I guess) and turn the broiler on and put it in for a minute or two in a baking sheet. Stir it at least once and put it back. Keep doing this till it’s crisped up to your liking but don’t let it dry out. Traditionally, carnitas (as with a lot of Mexican cooking) don’t have much seasoning because the salsa and toppings is where the flavor comes from. The meats job is to be very “porky”, savory and rich. This recipe is like a middle ground because you will probably have to use store bought hydrogenated lard and obviously you want have a traditional flavor till you reuse it a few times. If you end up making this often then you can add in less and less ingredients as you keep reusing the lard. Make sure to strain the meat when you fish it out because it will be greasy enough. You can add some other organ meat or pork belly or some other cuts of meat too as traditional carnitas was basically the entire pig but even in California we don’t do that often (mainly Al Pastor will be a whole animal) or Sunday meals.

Carnitas go better with corn tortillas rather than flour, and red chile de arbol salsa instead of serrano. Also you’re missing the sweet on the cazo, you can use orange juice (a lot more than those slices) or a coca cola.

Also, recipes, like everything else, evolve with time and modern cultures changing them to their tastes is normal. I'm not exactly the arbiter of what is or isn't authentic/quality Mexican food, but neither are you so
