Food processing isn’t listed on the nutrition facts food label. The label tells you what’s in the food. Critics say this is mostly irrelevant-what you really need to know is what’s been done to the food, and no label tells you that. In this program, Dr. Robert Lustig will expllain nutrition and food science. He says that essentially, all you need to know are two precepts, six words total: 1) protect the liver, 2) feed the gut. Those foods that satisfy both precepts he deems to be healthy; those that do neither are poison, and those that do one or the other are bad (but less bad)-no matter what the USDA and FDA allow to be stated on the package. Only items that meet both of Lustig's criteria qualify as real food-i.e., that hasn’t been stripped of its beneficial properties and sprinkled with toxins that will hasten our demise.
Dr. Robert H. Lustig is professor emeritus of pediatrics in the Division of Endocrinology at the University of California, San Francisco. He specializes in the field of neuroendocrinology, with an emphasis on the regulation of energy balance by the central nervous system. His research and clinical practice has focused on childhood obesity and diabetes. Lustig holds a Bachelor’s in Science from MIT, a Doctorate in Medicine from Cornell University Medical College, and a Master’s of Studies in Law from U.C. Hastings College of the Law. Lustig has fostered a global discussion of metabolic health and nutrition, exposing some of the leading myths that underlie the current pandemic of diet-related disease. He believes the food business, by pushing processed food loaded with sugar, has hacked our bodies and minds to pursue pleasure instead of happiness; fostering today’s epidemics of addiction and depression. Yet by focusing on real food, he says we can beat the odds against sugar, processed food, obesity and disease.

I am a doctor and have been to many conferences, but I have never heard anyone explaining complex scientific topics in such a simple and amazing language. The most amazing talk I have ever heard.

Is fatty liver disease reversible? I'm thinking not, since Dr Lustig had to prescribe liver transplants in children who had it.. 😮

@@alisonburgess345 yes it is!! If you go on a very healthy diet , your body will burn your excess fat right? Same thing happens in your liver! Im thinking he was referring to children that had developed liver cirrhosis , wich is caused by fatty liver see alcohol is not the leading cause anymore . Its obecety!!!!

So much good information, thank you. Just to note: my GP does a fasting insulin test, sends me away for breakfast, and an hour after that does a non-fasting insulin test. He says the difference between them is a far better indicator of my pancreatic health & diabetes status that either test on its own. Thanks to him, I am no longer pre-diabetic. He also supported us to heal my husbands' ulcerative colitis through diet instead of the usual ineffective pharmaceuticals. There are still some great doctors out there - you just got to find them. Look for older docs who have already paid off their student loans - they are less invested in earning $ from big pharma.

Doctors are nearly writing out a prescription for medications, before they hear a patient's symptoms, sad but true, there is no gain for them in health,, only sickness

Dr. Lustig's message aligns well with what those who truly understand the connection between diet and human health have long understood. Wendell Berry expressed this pretty succinctly with 'People are fed by the food industry, which pays no attention to health, and are treated by the health industry, which pays no attention to food.'

Keto does not miss fructose. The keto diet limits fruit, lowering fructose. I have been Keto for three years and I am not finding it difficult to maintain. I have a strong reason for doing Keto - I watched many family members die in agony from complications of diabetes. All were doing what their doctors told them to do. I also have support groups online and in my life - other people who are doing Keto as well as friends who celebrate my positive changes and fully support my way of eating.

That's why we need to change our medical system, to a TRUE 'health care' system. Our current system is a 'sick care' system, because it turns a greater profit (in the way it's currently set up).

I stop eating processed food, using cooking oil, avoiding trans fat, stop consuming sugar and junk food for 8 months now. I improved my health tremendously. My blood pressure went back to normal, minimize gout attacks, sugat count went back to normal.

I wish we could go for hydroponics and use nuclear power to drive desalination for the water intensive process. Hydroponics would enable cities. Also lab grown meat. We're not getting any fewer people on earth, and we need to think of space colonisation, so while regenerative agriculture is a great idea and we should absolutely do it, we can't drive a very large population on it.

@@lt2339 Yes, he is an MD and an attorney. I'm an attorney. In my view the MD is more noteworthy and because of it I want him to be given the honorific that he has worked so hard for and deserves. Calling him Mr Lustig seems disrespectful. He is telling the truth, I appreciate it tremendously because he is saving lives. My dream job would be to work with him or with an organization doing this kind of work.

This information should be started in the elementary school age, and reinforced throughout high school. We might find less morbid obesity, and heart failure, diabetes over the lifetime of these students. Sadly, big food will make sure that information does not reach them.

The obesity & diabetes rates keep rising while sugar consumption continues downward. Any ideas why? I know why and it isn't sugar that's the culprit. The studies that have gone on for decades now couldn't be clearer in their proof. The PUFA oil industry is a well over billion dollar industry that needs scapegoats like sugar and saturated fats in the hopes that people won't notice the real culprit.

This is so helpful. The only thing I would humbly suggest is that fruit today is nothing like what they were many many years ago. They are 'processed' because they have been engineered to have more sugar because it is more appetising and addictive. Vegetables are the same in that we no longer have the soil richness to give us what we need. Just like feedlot meat.

Completely agree, especially the majority of modern fruit. They are highly modified versions of the ancient heirloom species, seedless and ultra high in sugar, designed to be overconsumed, thus making us sick

I think he is speaking generally. Dole Organics bananas dont and I noticed certain canned veggies are nongmo. Quaker now has organic steelcut oats. I think the main thing is just to be observant and logical upon buying.

I have read this book and this is amazing one. He is intelligent, smart, wise and brave. I was almost worried about his safety since he criticize big pharmacy and good companies with specific details and it makes a lots of sense.

Mr. Lustig is highly intelligent and informative across many aspects of the body and the foods we eat but his highest level is common sense. He knows how to convey what he knows into layman terms.. His talks are just jaw dropping to me each time I watch him.

A year ago I moved here to Costa Rica. At that time I had serious respiratory problems. (My left diaphragm functioned at 60%) I am 5' 7". and weighed 220 lbs. I started walking everyday. My diet changed in the fact red meat here is expensive, and does not come close to good old USDA. Hence a lot of Chicken, Pork, and fish. I replaced sugar with Honey and fruit. My biggest sacrifice was bread there is a fresh bakery on every corner. OMG the way it smells in the morning. Anyhow my health has improved 90% I'm down to 180, and enjoy the beautiful beaches here as much as possible.

I've been to Costa Rica, and the thing I remember was the food and especially the fruit. But also the meat. I am a meat eater and I do no think meat is the poison doctors like Greger say it is. The beef tasted really different, but that was because they don't raise cattle on the CAFO factory farms and there is not so much fat in the meat. I'd love to go back to CR, it was such a beautiful place and very friendly people too.

Describing Dr Lustig - a preeminent writer, lawyer, doctor, teacher and speaker - as ‘quite smart’ is certainly understating things. He is one of the most articulate and intellectually honest speakers on nutrition, health and society I’ve ever heard - surprised how few Americans know of his man, genuinely a national treasure.

This man makes so much sense especially with the easy to understand example of friut. I am not convinced that eating fruit of the future will be quite so innocent. Plant engineers are working to make our friut and vegetables taste sweeter and sweeter = more sales/ bigger profits.

This was amazing! In 2020-2021 I've learned more about health, nutrition, how the body actually functions from YT than from any of my "formal" education sources! I echo the question *Who do we sue* ??? Everything done to manipulate food consumption for profit sounds so much like *criminal assault* . Thank you for this life changing information! I did keto last year with phenomenal results. But in this 2nd year of keto I learned just what he said about fruit and ultimately about food: a high fiber/water content negates the carbs and real, unlabeled, non-packaged food is best! So sorry friends and family won't listen!!! 😔 They're amazed at my weight loss and healthy condition vs the 2019 me, but not interested in the science behind it.

I’m with you, 2nd year of doing Keto an feel amazing. Friends and family are so impressed but no one wants to give up the sugars and carbs. My mind and health are so important and Dr. Lustig has influenced me especially in the beginning for my keto journey. Watching his videos about kids and sugars and food industry pissed me off enough to turn my junk food habit into anger for the industry. We are killing our young.

Remember how long it took to take down big tobacco and the opioid pushers? And food is worse because you can't quit cold turkey and the harms from processing are far more insidious and subtle. EVERYTHING now is adulterated (as our presenters point out, even meat because of grain feed and antibiotics).

I've also wondered who should be sued. I now think that a more important tactic is to get everyone to eat healthy. If everyone did that there'd be no reason to sue (except, obviously and unfortunately, for the many millions of humans already injured or dead) because the food and pharma industries would simply go bankrupt. Suing would certainly speed up that process but, as long as folks are spending money on this poison, those industries will always have funds to pay their lawyers!

You mentioned that drs. rarely talked about vitamins and minerals. I had an experience a few weeks ago regarding pomegranates. I ate several a day for about a week and noticed my fibromyalgia was less painful. I looked up pomegranates and found out they were considered a good source of pain relief. I asked my dr. if she had heard about this and she kinda dismissed the whole thing. I told her I had never heard any of my drs. talk about nutrition . I listen to all this research from places like UCSF, Stanford, Etc. But none of drs. seem educated in this. Who can people go to to get information, because none of my drs . seem to get it. I’ve loaded up on healthy, fresh foods that are not pocessed, and started reading labels carefully and, low and behold, many of my pain issues have gone away. Not all of them, but significantly enough that I will keep do this. Why are people in the medical field not being taught this stuff.

@@tommygunn7745 Probably by the time they see the results of bad nutrition it is likely its been going on for a long time, and also likely that the patient is not going to change behaviors in a time frame that can affect whatever their complaint is. But, they should be taught about nutrition and follow improvements in nutrition and work for improvements in teaching and behavior modification.

Concerning vegetables, I don’t hear much on the topic of raw vs cooked. I was raw vegan at one time. I got fat and lost muscle and became deathly ill. I’ve heard vegetables contain anti nutrients and need to be cooked. Plus the nutrients like beta carotene in vegetables has to be converted and our bodies are not good at the conversion. Vegans tend to be low on fat soluble vitamins too as p,ant fats are not adequate for the absorption of these vitamins. Even supplement ting vitamin D their blood work still shows them low in this vitamin, which needs saturated fats to be absorbed into the body. I now eat mostly lamb,eggs and wild caught fish. I’m no longer close to death, my strength has more than doubled and I lost over 50 pounds. I’ve never felt better in my life

Black Rock Vanguard and State Street hold billions of Fortune 500 assets in addition to being one of the biggest home renters and it is doling out trillions on behalf if the US Treasury and Federal Reserve. World Economic is in lockstep with them to gravely kickstart the great reset and 4th Indsrtl Revolution just before the last dark winter. My dad, a dentist, belonged to the Price-Pottenger Foundation since the 60's. They called processed food, "The foods of commerce," very forward-thinking. They suggested shopping only in the outer aisles of the supermarket, away from processed food in the center aisles. ALT - enzyme representing damage tothe liver; reference range upper limit should be 25 and not 40. The reference range has shifted to right. So 39 value is not normal. Uric acid- marker for hypertension and gout, a marker for sugar and fructose consumption. Upper limit should be 4 and not 5.5

My clinic’s labs have the upper normal ALT as 30. Different labs have different normal ranges for everything.

Thank you Dr Lustig. I eliminated high fructose and nearly all added sugar and seed oils. I no longer have fatty liver disease. So grateful. Within less than I week l had noticably more energy and my depression is much better. I am happier than for 30 years. My Dr is happy.

Paul Bragg wrote a book called the Miracle Of Fasting. In it he speaks of how he fasted his skinny sister who no man was interested in and she got all curvy and found a husband. Thin on the Outside Fat on the Inside. Wonderful explanation thanks Dr Lustig.

When you chew grains to eat them they don’t stay whole and if they did they would just pass through the gut and go out the other end. Grains must be chewed but we need all the parts there. Flax must have the hull broken for it to digest so we can get the nutrients. Thank you I find you lectures very detailed and informative

I loved the point where he said that 'keto is fine if you can stay on it', but as soon as you're off keto, you're stuck with a high fat, low fiber diet and that's not good. And note: most people don't stay on it.

Until I saw one of those healthy eating films discuss it, I had not realized how AWFUL US school food has gotten since I was a kid. What's so hard about feeding them zero sugar and breads? They said 'because this way you don't have to have a big kitchen staff." So? Raw fruit, raw veg, boiled eggs, and cheese don't require a big kitchen staff. It's crazy they are eating fast food, Coke, and chocolate milk in school instead. No wonder we're becoming stupider. Who can study or think well on those rations?

My dad was a veterinarian in stonewall working from the mid 1950 s to the 1980 s ....he always told me...biochemistry, physics, chemistry, that's all about LIFE...he always stressed Why aren't to day s doctors taught about NUTRITION in schools and especially in universities...l m so glad l listened to this clip with Dr.R. H LUSTIG..it s like listening to dad ...DR.LUSTIG is extremely well informed, educated and knowledgeable....l hope he passes some of his knowledge to the hard Headed Dr Fauci......other board certified physicians who are also about nutrition are Dr Joel Fuhrman and Dr Mark Hyman the latter who also reveals the dirty politics and out and out lies of the food industry providing evidence and proof of their tactics... l

I am so glad he mentioned antibiotics in meat, this is so often missed by almost everyone who talks about meat. Which is just one of the many reasons I stopped eating meat entirely nearly 30 years ago. I agree with all the information on processed foods, and people don't always understand what processed means, my brother told me he was eating healthy breakfast because he ate shredded wheat..... an example. I was like.... um..... no. It's so far from wheat berries, so much "food" is that way and the way children eat in this country is actually horrific, nothing but junk and candy and processed crap. It's no wonder there is so much ADHD and behavioral issues. I can't even. Thank you for talking about antibiotics, 80% of the antibiotics used in this country are used in the meat industry. Which is contributing hugely also to the superbugs issue. Also the info about diet wars, ANY "diet" can be healthy or unhealthy, the key is REAL FOOD. Sad, many people still don't fully understand what that means....

Fascinating ... It bugged me when I followed Dr. Lustig and his message seemed to change fairly drastically every few years, but now we can understand how and why. Tests: *ALT* - *Alanine* *Amino* *Transferase* - should be 25, but range has changed so that under 40 is OK. *Uric* *Acid* - Gout, Hypertension, Metabolic Syndrome - should be 5.5, but upper limit has changed to 7. Except that I have gotten rid of sugar several times for as long as 1 to 3 months completely ... and I mean totally, and my BP never went down.

If you want your blood pressure to go down then cut out saturated fats in particular and fats in general. Search for whole food plant based diet. Dr McDougall is one I would suggest looking at. He is vegan but doesn't mean go vegan if you don't want to, the information is still good. Personally I am trying to move towards low fat and low sugar and less processed food. I don't think I would be capable of going vegan but I can eat smallish amounts of lean meat and low fat dairy. If you eat full fat cheese see how much saturated fat in it, it's a lot. Anyway just worth considering. Best of luck.

Has not decreased my BP one bit. Fats, it has been proven, are not bad for you. That is 80's thinking. We need fats. Like Omega-3, HDL, LDL. It even could be that the explosion in Alzheimer's and dementia is due to not enough fats. Cut out sugar and carbs and processed foods.

Fat consumption has increased since the 80s along with sugar and protein, just because the percentage of energy from fats has dropped 3% doesn't mean anything. People are eating more of every macronutrient, certainly nothing about people not getting enough fat.
