Salt the steak and let it sit in the fridge for 24 hrs. The salt will dissolve and be absorbed by the steak and also dry out the surface which will make that Maillard easier to achieve. I’d prefer more char on mine but I’ll definitely give this a try.

what i like to do is reverse sear, specially if i had a blow torch, season and on the oven it goes for 20 to 30 minutes on low depending on the thickness and then dry it out and char with the blowtorch, the crust must be amazing

It separated that way because there was a thin fiber separating the two pieces of the muscle. That's why they typically tie filets and other cuts in high-end restaurants.

For anybody wondering it’s perfectly safe to use a butane torch on your food, chefs use them for desserts like crème brûlée all the time and that steak was totally safe for him to eat because the torch would have killed any possible bacteria on the outside of the meat and if you know anything about steak you’d know that bacteria cannot penetrate the inside. Now if you don’t prefer a rare or blue steak then that’s okay just don’t run to the comment section to judge others for liking it and we won’t judge you for liking a dry chewy overcooked steak

Rare only works with fillet unless you're grinding it. Strip and Ribeye is tougher if its rare than medium rare, the higher fat content needs to break down a little bit. I eat eye of round raw if I grind it, tastes pretty good. Eye of round is cheap and low fat, raw tastes a bit like sashimi tuna.

I started with blue rare eye of round and eventually ended up eating all cuts blue rare. For some reason, I can no longer stand the taste of rendered beef fat and would much rather chew my way through raw fat.

Blue Rare is the way to go. I let my cap steak (rib eye) get to room temperature, salt it well, and then place it in a hot cast iron pan that has just a tiny bit of Avocado oil in it. I give it around 120 seconds on each side, and then smother it in grass-fed butter. I then take the steak out and let it rest for about 6 minutes. It's absolutely delicious! The meat is so fatty and tender too.

Dude, that's that mystery meat 🍖 They used meat glue to adhere both of those sides together with a hemoglobin type of glue made from beets. The media calls it monster meat.

Hi bendy Kudos to you you be creative do something off the Box but I think every month a little butter into the pan so the heat of it it will kind of get out the stair out of the Cross outside and if you put black pepper or crack Papa although he take it it'll give it a really good flavor to it but you do good and you're cooking home that's the most important thing but it's very expensive though

Cut it into smaller pieces and blowtorch all sides. More charred surface area to go with that blue center, then season after and give it one final torch just to brown the seasoning. That is how you cook a perfect blue steak. Ive been to too many places that serve grey blue steak, its disgusting. Char is the keyword.

"chef quality" torchers are used for finishing steak... not really cooking it. It's meant for giving it a slight extra sheer specifically when cooking it via specific means like oven or vide...
