Cuban-style rice pudding is the perfect dessert to satisfy your sweet tooth! This traditional recipe has been passed down for generations in my family. My abuela and I show you step-by-step how to make it in this easy guide.

📝 Instructions:
Step 1:
Empty the valencia rice into a large stock pot. Wash the rice by rinsing it out and draining it. Repeat 2-3 times.
Step 2:
Put the pot on low-medium heat and add a healthy portion of milk to the rice. We began by adding 3 cups of milk to 12 ounces of rice. The rice will cook slowly. You will have to keep adding milk throughout the process so the rice cooks through and doesn’t dry out.
Step 3:
Add a couple cinnamon sticks to the rice and stir.
Step 4:
Add a pinch of salt to the rice. Stir.
Step 5:
While the rice is cooking, take a few minutes to peel the skin of a lemon or lime. You only need about a quarter of it. Add it to the rice and stir.
Step 6:
Add vanilla extract to the rice and stir. Stirring often is the key to the rice not sticking to the bottom of the pot.
Step 7:
When you see the rice is starting to absorb a lot of the milk, add another healthy pour and stir. Every few minutes check to see if the rice has cooked through, without drying out. If it’s not soft, add more milk and continue to cook it on low-medium heat.
Step 8:
Add raisins to the rice and stir. If you don’t like raisins, you can leave them out!
Step 9:
Add more milk if needed until the rice is soft and cooked through. Once it’s 95% cooked through, add a can of evaporated milk and cook until the rice is soft with a thick-creamy consistency, like risotto.
Step 10:
Add a can of sweetened condensed milk to the rice and stir.
Step 11:
Plate the rice pudding in individual containers for easy serving. Add a sprinkle of cinnamon to garnish.

Se debe repartir en porciones personales. Agregue canela en polvo como guarnición.

Would it be easier to zest the lime or lemon instead of using a knife? That way you can make sure none of the white bits come with it?

Zesting is an option as well! Abuela likes the bigger chunks so its easy to remove before plating -- while still giving it flavor!
