Typically you should cut the mushroom at the base so the foot/mycilium stays in the soil undisturbed. And as for cleaning use a dry paint brush to remove dirt and debris. Getting mushrooms wet after being picked will make them spoil faster. Store mushrooms in a paper bag to absorb moisture.

In this case, the leftover wine caps will be dehydrated, so using a damp cloth to clean the mushrooms doesn't make a difference.

The whole "mushrooms soak up water like sponges" thing is really a myth. Weigh some before and after a quick rinse and be convinced... Don't *soak*, but a rinse in a colander is not a problem

I recommend the fanned makeup brush with stiff bristles....they're actually delicate to use and precise to get in crevices....work great

Your mushroom Tops are where the spores are at!! You should save one too and replant it not just the bottoms! The bottom mycelium will only regrow like 3 - 4 times

I was going to say the same thing. Lots of people think they grow from roots like plants do. That's why we get yelled at for not cutting mushrooms and leaving the "roots". It's a little bit crazy making to be honest.

I could easily eat all the mushrooms you harvested on my own in one meal. 😆 You can put a few mushrooms in some non-chlorinated water overnight. They will release spores into the water. Run the whole thing through your blender to make a spore slurry, pour this back into your mushroom bed after you refresh that with new compost and chips. Do this forever and with a little luck, you'll have mushrooms there every year. You can also try this with mushrooms you bought at the store and grow a wide variety of them. Morels can be difficult to grow, but sometimes you get lucky.

In case of morels, they do well in allkaline conditions and often come up spontaneously after a (forest) fire, so spreading wood ash amongst the inoculant will likely produce better results

Making one meal with more than the daily recommended salt intake says absolutely nothing about someone’s overall health or how much they value health-each serving is probably fine anyways. At any rate, it’s not my job to worry about someone else’s salt intake lol. And I don’t think it’s a fair way to judge an entire production to post a KZfaq video. That’s each individuals business to manage their diet. It’s not your food or your body, and you have no knowledge of her health, so why worry about it? We’re all smart, capable adults that don’t need to be policed by internet nutritionists.

My advice would be to start earlier than you think. If you wait until spring then you're already running late. Start late winter, especially if you want to raise patio veg from seed.

When you harvest mushrooms, cut them at the stalk, don’t pull out the roots.

In case you've never tried it I dehydrate mushrooms then make a powder from them. I use this powder in meatballs instead of grains so they are safe to can. Adds great flavor as well. And I'm not a huge mushroom fan either but in this way it's so good.

I dehydrate chicken of the wood mushroom and powder them if I find them too late and they went woody/punky. This also works for lobster mushrooms as well.

Most gleaners/gatherers keep a rule of 1/3. Always leave at least 1/3 of perpetual harvests to go to seed and mulch the ground for future harvests.

Hi Becky, we pronounce shire as shear. So the correct pronunciation is Wos-ter-shear sauce. Us Brits invented a language that sounds different to the way we spell. There's a village near me and it's called Cogenhoe. However it's pronounced Cook-no! I know it's weird 🤣🤣🤣

Years ago I worked at a restaurant where the most ordered appetizer and happy hour snack was their deep fried battered mushrooms. It was listed as "There's a fungus among us" and served with sour cream! Your dinner looks amazing and your skills are that of a cooking school graduate!

Wine cap mushrooms are good to plant around you root veggies because they actually produce an enzyme that kills nematodes, the critters that eat your root veggies. So many benefits and uses.

if you have enough mushrooms, besides dehydrating, I suggest you can some. I've only done it w/ grocery store mushrooms but I had a neighbor who found chanterelles while she was hiking and she canned them.

Looks delicious! Something that changed my mashed potato game is this recipe, specifically drying the potatoes in the pot after draining just for a few seconds. It changes the texture and makes them beyond delicious 😋. Hope y'all try it! Mashed Potatoes 3 large russet potatoes, peeled and cut in half lengthwise 1/4 cup butter 1/2 cup whole milk salt and ground black pepper to taste Place the potatoes into a large pot, and cover with salted water. Bring to a boil, reduce heat to medium-low, cover, and simmer until tender, 20 to 25 minutes. Drain, and return the potatoes to the pot. Turn heat to high, and allow the potatoes to dry for about 30 seconds. Turn off the heat. Mash the potatoes with a potato masher twice around the pot, then add the butter and milk. Continue to mash until smooth and fluffy. Whisk in the salt and black pepper until evenly distributed, about 15 seconds.

For the sauce: we begin the same way, but before adding moisture we put some flour, styr it in and then add wine, etc. This helps to make a sauce. Just for info.

The mushrooms you see are just a tiny portion of the size of the underground web. All these mushrooms would just be from one organism. So they are all identical twins. The giant underground web system can be as large as tree roots and they will keep growing back. You’re basically just picking their spores. Granted the mycelium will only come back a number of times, so keeping the bottom of the mushrooms will make sure you can keep growing them

I've never harvested wine cap mushrooms but when you harvest wild mushrooms its better to cut them and leave the bottom in the ground. That way more will grow back in that spot

Unpaper towels, I hadn't seen them before! I've been using cotton napkins for years! I pick them up at goodwill, usually really upscale brands for super cheap! Love watching you! Such an inspiration!

I love making a pan sauce using a little red wine to deglaze the pan the steaks were in especially with mushrooms and onions! Nom nom!

Im Norweigian and we pick a lot of mushrooms in tge Woods in the autumn. We have a knife we pick with, that way the spores can grow a new batch after you pick it. And we use a little food brush to clean the ones Who needs it. You xan also batch them in the Pan, and freeze them in the juice they release. And woila you can ise them to elk, raindeer and birds you hardest during the hunting season .

Hello Becky, TIP FOR KEEPING HOT MASHED POTATOES for long time. Make a water bath in larger pot on stove top get it to a simmer and lower to lowest setting then place pot or bowl of potatoes in the large water bath. Will keep mashed potatoes warm for long period of time or dinners. Rachael Ray tip I learned while back.

pro tip: when your using the same pan that you cook your meat in for vegetables. use butter instead of oil cause you'll get a better flavor to whatever your putting in there

I started dehydrating mushrooms this year and turned them into powder to add to soups/stocks/stews/pot roasts. It’s delicious! Recommend. Especially if you don’t like the texture of the mushrooms.

Have you ever made steak butter? And just keep it in the freezer and ready to use! After you cook your steak, wrap in foil with the steak butter and let it rest and get ready for the juices! Mmmmm!!

One of my dearest memories of my wife is that she went and found someone who would teach her to make crab legs, so that she could make them for me. At that time, I did most of the cooking, and she blew me away with the meal, but moreso with how much she cared that I would enjoy it!

Those Red Cap Mushrooms are wonderful for making a mushroom (natural msg) seasoning. Just dehydrate them, blitz in a blender or coffee grinder and then you'll have very expensive mushroom seasoning powder for free.

The dinner looked soooo good! I love the mushrooms because there is nothing better with steak beside potatoes than sautéed mushrooms! Have you ever tried goat cheese instead of Parmesan cheese? I don’t even like goat cheese but with mashed potatoes and garlic it is DELICIOUS!

Replanting your bottoms is exactly what you should do! Or just cut them out in the garden and leave the bottoms fully intact :) Happy to see you got such a wonderful harvest hope you enjoy! ❤️

You left mycelium in the ground don't worry. Some people say cut at the base but its more for not bringing as much soil into your kitchen. The spores are from the cap however....you teach us I hope we can help you. I have dehydrated mushrooms for 40 years. They are great additions to our/your winter soups. I live in oregon. I was so shocked when i walked in the garden and found morel mushrooms! It may have been in the compost i bought blessings

We always had fresh sliced cucumbers in vinegar with black pepper on the dinner table growing up but my dad would add ice cubes to make them really cold and crisp. Yummy!!

A good mushroomstue: fry the mushroom with a charlotteonion, Cook down the mushrooms intill the moisture disapear, add a bit of soy sauce and 3dl of heavy cream and let it Cook untill the heavycre reduces, very good with meat

Cream cheese and sour cream is good too in mashed potatoes. Sometimes I'll boil onion with the potatoes for added flavor

I use apple cider vinegar with some sugar for my cucumbers and i add my onions in it too. Very yummy.

I’m so so happy for you that your mushrooms grew up so beautiful and yummy!!! Yes, always try to leave or replant the micilliim or fungus. The can regrow together and fruit again. Plus it will connect your garden underground and help the health of your whole yard!!

I ordered morrels but haven't got them in yet. Excited to see the wine caps. My instructions say to to cut mushrooms at ground level, which we do when picking wild. May try some button as well. Good job girl!

Have you ever had an issue with drinking alcohol with your winecaps? This was an issue for me. I may also have eaten way too many. They were so good. Very easy to grow!
