This is a faithful copycat of TJ's Arepas, reverse-engineered from the official ingredient list - which is quite different from the authentic Colombian/Venezuelan savory classic, not just in appearance but more importantly in flavor. It is a lot sweeter, due to the abundance of sweet corn used in place of cornmeal. When corns are picked, enzyme action immediately begins to convert sugar in the kernel into starch. That's why commercial cornmeals are not sweet. The kernels had aged enough that almost all the sugar had been converted into starch. The use of sweet corn here (whether fresh or frozen) gives the patties not just sweetness, but also a distinct, refreshing corn flavor, that is what makes this snack so addicting.
