I've seen Christmas vacation at least 20 times and I still LOL at the scenes that Eddie's in. If you really pay attention, you can see all kinds of funny stuff about him. He owns every scene. I don't know who cast him or even know how they knew that he would be perfect for this roll, but they did a great job!

The scene at 0:20 was improvised by Chevy and Randy during filming. The actress that played his daughter, saw this and thought about improvising something herself. So she improvised the kool-aid mixing with her arm in the next scene. Chevy saw it, told the director to film it and the rest is hilarious history.

I love how at 2:45 there's a lot of elements of Eddie in this scene. Not only is he telling a zinger of a story about his dog, but the way he is dressed, and the best part is how he completely ignores the sense of personal space. As the scene progresses, he leans in closer and closer to Clark. Then after that, he breaks the thing sitting on the table and then starts talking about how his kids are going to get a career working for the carnival.
