Recipes Below
Chocolate Cake
2 cups all purpose flour
1 cup applesauce
1 1/2 cup coconut sugar
2 tsp vanilla
3/4 cup cacao powder
2 tsp baking powder
1 tsp baking soda
pinch of salt
1/2 cup coconut oil
1 cup hot water
1 cup nut milk (unsweetened)
1 tsp apple cider vinegar
mousse filling
2 cans coconut cream (only scoop the cream part)
2 bars of dark chocolate
1 tsp vanilla extract
chocolate frosting
12 medium sized medjool dates (about 1 cup packed tightly)
1 cup almond butter
1/2 cup cacao powder
salt
vanilla extract
1 cup soy milk + a little more for blending if needed
falafels for quinoa salad
3 cans garbanzo beans drained and rinsed
1 bunch parsley
1 medium onion
3-4 cloves garlic
1 cup oat flour
1 TBSP cumin
1 TBSP garlic powder
1TBSP coriander
2 tsp salt
1 tsp black pepper
tahini sauce for quinoa salad
1 cup tahini
3/4 cup apple cider vinegar
1/2 cup coconut aminos
5 cloves of garlic
1/2 cup water + more if needed to blend
blend on high for 2-3 minutes, the longer you blend the more the tahini will thicken!
cream sauce for Alfredo noodles
2 cups cashews
2 cups soymilk
1 cup water
1 head of garlic
1/2 cup nutritional yeast
2 tsp salt
2 tsp black pepper
squash soup
1-2 medium squash
2 medium onions
1 head of garlic
1 can of coconut milk (or homemade coconut milk)
1 TBSP curry spice (I usually add a little more to taste)
2 tsp salt
vegetable broth

Spending the time cooking nourishing meals for yourself (and others) is so therapeutic to me. Sometimes it can feel like a chore but when you give yourself the time and realize you're creating something beneficial for your health it's more enjoyable. Thanks Isabel for inspiring us all ❤

I totally get the feeling of being scared of things like traveling alone. The older I get I realize all the things that could go wrong instead of embracing the journey. I relate to that feeling so much. It's awesome you are doing something solo. good luck! Have fun! You got this! Can't wait to see the journey.

Wow, that's so sad. Makes me enormously thankful for parents who raised my older sisters and me to be very independent. My bestie and I took off for Europe at 17, and never looked back! I turned 67 last October.

@@donnabaardsen5372 I think when you’re young you have not yet experienced what can go wrong in life and so there’s less apprehension and fear. I think part of being independent is understanding their are pitfalls and sometimes taking a different road can help to avoid many pitfalls otherwise you’re not really independent just reckless!

I loved it from the tiny house the most, when she went to the garden and picked them and then cooked them up, washing and cutting them, so feel like Im there moment, can even smell the pine trees

I have said it before and I will say it again, the quality of these videos are insane! There are professional shows that do a far worse job with capturing cookery. The thought and time it must take planning them to get the right shot. Just amazing :)

Isabel, 💕 We don't decide for you which thumbnails to use, its your channel after all, however you did say you love and are grateful for us, therefore if the thumbnail was actually the food you made, it would have been nicer and more interesting for us as your subscribers and those who don't know you. It’s true with a thumbnail like that it makes me feel weird clicking on it. I know how amazing she is and her videos are of wholesome good things, but with having a preteen daughter, it feels weird to click on it. The the thumbnail does not do justice or show a glimpse of how awesome her videos are

Agreed, only reason why I stopped watching her video's. I'm sometimes not sure what attention she's reaching for when her content shows otherwise? One of my favorite shows that I unfollowed as well jake&nicole let me down when I found out they had a side gig that was inappropriate so “To each their own” I guess.

Wow, this is the exact struggle I'm having with myself right now, and I have come to the same conclusion. I have to make it the perfect time for the changes my life needs because like you said, it's not going to happen like magic. @@shakastaily Good for you!💪It can be a struggle. I'm currently working on coming out of some pain related depression , because I have severe arthritis in my spine and both my hips and my right hip needs to be replaced. I haven't taken an actual walk in like 3 years I'm looking forward to that when I can finally get my surgery, but I had to force myself to get out of bed everyday and be functional because I refuse to take Pharmaceuticals for the pain or the depression so I'm just going to do it myself!👍

What you said in this video really resonated with me. I moved to the middle of a forest thinking it would magically transform me into the woman I saw myself being. Yeah...didn't happen. Taking those steps to reach that person is a good idea. I was feeling desperate and disappointed in myself because I hadn't "poofed" into that woman but after listening to you put that into perspective for me, I have a newfound motivation.....so thank you Isabel. The food you prepared looked so nourishing, healthy, I am so proud of you for even taking the interest. Please make sure you take warm clothes as you seem to mind the cold. I can remember when you were living on your own in your tiny home you use to go out for a walk in the dark up the high hill with very light clothes on never complain about the cold, you seemed to love the winter. This. Is the reason I am a bit concerned for you, you have changed completely to the way you were. I am not judging you dear there is nothing to judge, you are a remarkable smart young lady, have so much going for you. I am just a bit concerned for your health. I love learning your recipes and watching you cook, Isabel. I am vegetarian, but lean vegan. Vegan cooking intimidates me, so learning about your go-to recipes is very motivating to me. Hope you will do more cooking. Even while you travel, if that's possible, as vegan/vegetarian travel can be challenging at best to find nourishing food. I would say about your fear, speak to it as if it were standing in the room. Ask why the fear? It's true when we get older, we start to know more about things that can go wrong, which is not the case when we are young, newly headed into the world. Don't lose your confidence! You'll be just fine!

Thank you Isabel for showing us these recipes. I love watching you cook all your delicious foods! Like others, I enjoy the sound of the chopping as you cook and talk. It's really inspired me in cooking for myself and hubby, and I'm 65!!! Anyhoot, I bought your first cookbook that is an ebook. This video has been the push I needed to try the recipes. I needed a bit more instruction as you gave today. So, thank you so much. I didn't marry until I was 35, and before that I went alot of places on my own and lived in four different areas of the country before my Minnesota based hubby said we'd be here in Minnesnowta (ha, ha) for a while. It's been 30 years, and our son's birth, graduation, marriage, and upcoming 5th anniversary for him and his sweet wife, our gotcha girl, and we will all be moving to warmer states in one to two years or so, Lord willing. I think of you in your solo trip. I made many. Don't be afraid dear one, but be wise, and know we pray for you and your dear ones.

The best way to not have adult fears is to first, travel with parents. Then, when in the teen years, have solo and other adventures. Our entire lives should be filled with adventures.

Thank you for sharing about your daily yoga practice. Just as I was thinking: Boy you have the dream house and there is nothing else to do but enjoy life, whish I was there with you. Only then I would be able to have all of the time to do my daily practice. And of course you said the right thing at the right time. I was in the same spot 2 years ago, where I didn't do any yoga. But just by watching you gives me this just enogh push to keep going every day. You can't imagine how helpfull it is to just hear you once in a while. Thank you so so so very much.

Finished my second carrot cake yesterday. Last night I made the breakfast cookies. People who taste Isabel's recipes can't believe they don't have butter and eggs. I thought I did not like nutritional yeast ( bad experience back in hippie days). I trusted Isabel and made the nut cheese. Made my second batch yesterday. I love it with Kim chee (found some made close by that uses same recipe as isabel's). Loving these recipes.

Isabel I so appreciate recipes that are gluten free in addition to being vegan. I'm especially excited to try the falafel recipe, thank you. Also, that sentiment that you don't magically turn into a different person just because you move to a rural location, or the season changes etc is such an important one. It's important to hear it if you are planning on moving or changing something, but it's also important for everyone who hasn't changed something to hear it as well. Moving to the country isn't a panacea for life, it's just very very different. A beautiful video, thank you.

Thanks for showing those fabulous recipes. They were so colorful and I eat best by color. Also I spend a lot of time wondering what I have to do in the house, how to keep my little dog entertained because it was so cold. And when I get that list is things I might get to a few of them. But I keep it in my mental list and eventually it gets done. For me I run out of energy. And I face the fact that it’s important to recharge as well. Can’t wait to hear about your solo journey. Have fun on your solo trip! I’m also going on a one week solo trip for the first time since being an adult! I can so relate to the no longer being fearless, as a teen I wouldn’t have been scared at all… So exciting!

A few months ago, I was in Norway for my semester abroad. That was an important step for me, since I'd never lived alone abroad before. I can't describe how awesome the journey was, but still, I got the impression evrybody had done "more amazing" things than I. I've never back-packed before, I've never been camping, I've never travelled alone,...BUT. Comparing yourself to others is detrimental for your self-worth. And, I have to be honest, I'm relieved that someone as Isabel is terrified to go on such a trip. It's so brave that you're going! The woman that could go anywhere and do anything is still there, you just have to find and embrace her again :) We believe in you!

I found that I was never getting the time to do the things in life that I really want to do and I couldn't find a motivational force to push me. That was lovely I will make some of those recipes as I have your book. You might be scared but you’re just outside your comfort zone so no wonder! I would be in panic mode! It’s so beautiful to watch you being vulnerable and normal as it makes me feel like all other humans going out of their comfort zone which you’re supposed to do daily right……hmmm💁 I’m petrified on a daily basis at 50 years old 😂 thank you Isabel and I can’t wait for the next one ❤

I'll start by saying that I am much older and YOU inspire me!! The beautiful artistry and philosophical musings of your videos make you stand out as a film maker. There is no need to get clicks by posing in your underwear in a thumbnail or having a shot of you undressing or dressing. Sorry, but as a woman, while I don't have a problem with celebrating your body, I just feel you underrate your own worth and talent by doing this. That said, it probably does get more clicks and revenue, but I still think you are selling yourself short.

Yes, I'll be 60 this year, and she has really inspired me to put more whole, unprocessed food in my life and to do more physical activity. I haven't had meat since 1976, but I've not been as healthy as I could have been. I had a long depressed type of life peppered with physical illness as a result of not paying attention. This is all helping me to get back to balance.

Oh Isabel!! I thought the recipes will be difficult but they seem pretty easy instead.
