If built as a gym space from day 1 you can use additional joists with closer spacing in key areas along with adding double or tripple studs. Probably good use of LVL.

Because of your weight storage, can you squat facing the wall or bench inside facing away?

Due to the weight storage, squatting or benching can only be done on the frontmost uprights.

I built my home gym in an upstairs bedroom, but I would never ever drop anything up there, even with crash pads.
