CREAM PUFFS + How to Avoid the Most Common Mistakes When Making Them

maple cinnamon cream puffs (yield: 2 dz)
choux:
3.5 oz (100g) water
3.5 oz (100g) milk
3.5 oz (100g) butter
1 tsp salt
3/4 c (100g) AP flour
4 eggs
1. Bring milk, water, butter, and salt to a boil.
2. Turn off the heat and add flour all at once. Stir until the dough comes together.
3. Put the dough back on low heat, stirring constantly just until a film forms on the bottom of the pot.
4. Transfer to another bowl and let cool for at least two minutes.
5. Slowly add eggs and start checking the consistency once 3/4 of the eggs have been added.
6. Pipe into circles with a diameter of 2 in (5cm), top with craquelin, and bake at 375F (190C) for 20 min and then at 325F (163C) for another 15 min or until dried out.
craquelin:
2/3 c (140g) brown sugar
1 c (140g) AP flour
5 oz (140g) butter, softened
1 tsp cinnamon
1. Mix all ingredients together until a dough forms.
2. Roll the dough between sheets of parchment paper and freeze.
3. Cut circles just bigger than the diameter of the cream puffs and place on top.

2 c (454g) heavy cream
1/3 c (104g) maple syrup
2 tsp cinnamon
1. Add all ingredients to a food processor and process until thickened, stopping every so often to scrape the sides

Don’t worry you wont! As long as you follow the steps you’ll make something good or bad lol. I’m really clumsy and started baking at 13 because I needed a hobby, and I haven’t burnt the house down… yet 😂

Seriously! You don't just want blind instructions, you want to know how certain things change the end result. Thus, you can refine your process to make the filling a little more dense or a little lighter, to suit the exact palate you're baking for.

I work in a bakery and since i got hired during holiday season, i got no training and was told i wasnt meant to be a baker since i cant do anything. I can bake really well at home, i pull recipes out of my a** as my mom says lol. I want to own a bakery and when i couldnt keep up, when i wasnt learning, and when my boss told me i shouldnt even be a baker, i wanted to give up. Thank you so much for your videos, they have taught me so much and have relit the flame in my heart. 💜💜

Find work somewhere where they'll see your potential, train, and appreciate you. That sounds like an awful business and it's terrible that you were talked down to like that. Keep baking and follow your passion! I'm sure you'll do fabulously.

@dez9084 Thank you 🥰 there aren't many places in my area that pay well enough, unfortunately, but I'm keeping my eye out. My bosses have calmed down since holiday season is over. Theyre still a bit grumpy, but not as bad, so i can tolerate it until i find something else

@@Thebatcavepetfriendlybakery - so they just expected you to know how to work industrial machines from some sort of instinctual gift? To suddenly know how to make a recipe 100 times bigger than you normally cook at home off the top of your head because you obviously presented as a genius right? That must be why they thought you could just jump in and determine their proprietary recipes just from looking and tasting their products instead of actually telling you HOW to make the stuff? That must be it. It’s obviously your own fault for looking so incredibly talented during your interview.😂

To be fair, a lot of home bakers aren’t prepared for the chaos. I worked FOH at a small, popular, locally owned bakery that did a lot of high end work. I turned away multiple retirement age women because I knew they weren’t ready for the sweat, the mental breakdowns, the burns, the 3am shifts, carrying 100lb bags of sugar up a staircase with no hand railing. You don’t want the smoke, Nona! 😭 People who were prepared had worked in restaurants and/or attended culinary school and showed up with their hair covered, looking like they’re headed to a gym or art studio.

The explanations of what happens when under/over done or between methods/tools is fantastic! Makes a great way to check what stage of cooking/mixing that it's at so a home baker can check and any time and understand if they're at the right point, need to go further or have overdone it

Make sure you bake it a the correct temp.. dont open the oven til it's halfway done.. these things are a bit tricky when baking

This is actually called ‘Choux au Craquelin’ because of the disk of mixture he put on top made it a crackly confection!

Can you make the cream that goes inside the cream puff next? I remember as a little kid, there was a man that worked at a gas station restaurant who handmade cream puffs every morning, and my mom would treat me every now and then to them before school. He left to go back to NY after about a year and I never had a cream puff as good as his ever again. However, your cream puffs look EXACTLY like them, but I want to know how I can make the cream for the inside. 😭 I’ll bake my dreams of eating one of them again, even if that means I burn the whole house down lol.

Just a note if you are pre assembling these in advanced you can use thickening agents like gelatin to prevent the cream from going flat.

Love the detailed explanation in your video. However, the pastry bottom always sticks to the baking paper and tears away even when carefully lifting them off after cooling. Can you please suggest how to evade such a mishap?
