With just a few minor substitutions, this could be a vegan recipe also. Use rice instead of pasta and nut creams instead of sour cream

Mushroom Stroganoff really shows of the mushroom selections arriving at farm stands. This recipe is a great alternative to the classic beef stroganoffs. What would you put this stroganoff over and what would you have with it?
