CREAMY ZUCCHINI SOUP WITH POTATOES
Zucchini soup with potatoes and heavy cream is an easy zucchini soup that even a beginner in the kitchen can easily prepare.

INGREDIENTS
1 kg of zucchini
2 tablespoons of clarified butter
1 onion
4 cloves of garlic
750 ml stock or water
300 g of potatoes
200 ml of cooking cream (heavy cream)
salt pepper
chili to taste
a stick of butter
HOW TO PREPARE ZUCCHINI SOUP
1. First, finely chop the onion, cut the washed zucchini into rounds, and peel the potato and cut it into smaller cubes. Melt the clarified butter in a saucepan and fry the onion until light brown. Then add the garlic rings and saute for a few minutes.
2. Now it's time for the vegetables, add the zucchini and potatoes, saute together for a while and then pour in the vegetable or meat stock. If you don't have broth, use water.
3. Add chopped chili pepper to the base and cook until the potatoes are soft. As soon as the potatoes are soft, add the cream and blend the soup with a hand blender until smooth.
4. At the very end, season the soup with salt and pepper and add a cube of butter to soften it. You can also add a pinch of nutmeg and herbs.
