Thank you for your efforts and participation in canuary. What I learned from this demonstration is that I am putting too much ‘solid’ in my jars. I need to remember no more than half full and finish up with an equal amount of liquid. Bing💡the light went on!☺️ I also appreciate your link to Healthy Canning.

Ok, now I want to make some white beans! I soak them overnight, drain, rinse, add new water. I use a ham steak, (if you get a ham steak with the bone, do add the bone!), cut into pieces, but you can use 2 or 2 slices of bacon or a ham hock. Add a large onion, 2 or 3 cloves of garlic, a diced potato, a sliced carrot, if I have it, a little oregano, basil and bay leaves. I also add about a half of a small can of tomato sauce, and pepper. Oh my so yummy! Your soup sounds wonderful!

I love northern beans with ham so thank you for sharing your recipe to can. Soo good to can and just open a jar for dinner and make a pan of cornbread with some sweet tea....soo delicious.

I take my dehydrated veggies …..jalapeños, onions, celery, shredded carrots, mini peppers and add it to each jar then put my beans and chicken broth in….makes a spicy base soup for a dinner…while warming up add cooked rice or noodles and meat and you have a fast meal. I cook the rice and noodles and package enough for a few meals to have on hand in the beginning of the week. Adding this base soup over a baked potato, taco or chili seasonings and chopped tomatoes, sour cream makes a great dinner also.

Rachel, I never precook my beans, anymore. They are beautiful and not at all mushy. Pints = 75 min. Quarts =90 min.

We love Ham and Beans all year long. But, we were raised on Pinto Beans, so, that's what is in my beans😊. My Mom made a batch of Ham and Beans with northern beans years ago and we all refused to eat them (just until we got real hungry -- not the greatest flavor for breakfast😅). Yours do look wonderful. May have to give them another try...

I made bean soup in the instant pot yesterday with the leftover ham bone from New Year's dinner. It was my first time cooking with dry beans in the instant pot. It turned out really good! The ham was so tender and flavorful. I think cooking the ham bone in the soup makes the flavor so much better! I will freeze some of it for later. Next time I will make a BIG pot in my roaster and can it up...what a time & money saver to have it ready to heat up and serve... Thanks for sharing! 😍

I love canning because it is usually a lot cheaper and most definitely tastier! Many times I will add up the cost of a meal from my home canned foods and figure out the cost per serving. It makes the hard, long day of canning that much more worthwhile! I am teaching my daughters to can and I am so thrilled that they are ready to learn! I canned my three bean soup recipe and it is a huge hit! I also can all types of dried beans because I do not like the taste of processed beans, they taste like metal to me. I can all year as well. I canned chicken yesterday and today I filled my dehydrator with cinnamon apple slices. I really enjoy your videos. By the way I also live in MI😊

I am always up for soup canning ideas. I have thought about canning soups I make for a meal because there is so much leftovers plus I have no more freezer space. I am definitely looking forward to the Mexican soup.

That looks so good Rachel. I canned all my soups a few months ago. I canned, white bean, black bean, stuffed pepper, stuff cabbage and chicken soup. It's just me so I did 4 qts each except the chicken soup I did 4 qts plus 4 pts. I have already had some and they were amazing.

Soup looks tasty. I've never seen dried Northern beans in grocery stores, so here's a tip...You can substitute Navy beans which are smaller OR - Cannellini beans (White kidney beans) which are larger. 😊

This is the best money saving ,soup is my favorite eat tons of it in the winter and for the price of 1 bird can get a case of homemade soup can't beat it . I bet this is yummy I will need to try it .

Okay, you processed the pints for 75 minutes, and the quarts for 90 minutes, right? Did you mix some? If so, you have to do them for 90 minutes, I thought. Your soups all looked delicious. Thank you for sharing how you do it. God bless you both.

Rachael, give me your secret to the lid thing. My husband is the one that does it and when I do it I usually have a stream of steam. Mine has a bit of a wobble to it and I am told that is normal but I just can't seem to get that bugger on right at all. I have the All American 925 canner.

The basic principles are the same for pressure canning meats and vegetables. As a general rule, each vegetable type will have some specific preparation guidelines. It's the same with meats types. With all of these, the variable is altitude and processing times. Once the food is prepped & jars are filled, processing sequence is the same. If you can process plain water, using chicken broth instructions, you can also can meat! For anything you can, fruits, vegetables, meats, combinations of same, just follow the prep guidelines, general processing guidelines, and the specific pressure and time for your altitude, you will be fine. Once the canner is loaded there's no difference between processing beans and venison burgers. They require the same processing steps, pressure and times, based on your altitude. In fact.... In my pressure canner I can process a canner load of 9 pints of pinto beans and 9 pints of stew meat at the same time. The only material difference is the prep work for each before I load the canner. Hope these words will give you encouragement to put protein and meat stocks on your pantry shelf. You'll smile when you see those jars filled with "heat & eat".

We've done a few ferments but honestly it's not my preferred means of preservation. I don't enjoy the taste myself of most fermented food

I make a version of this soup but don't pre cook anything. I know the jar 1/4 full of unsoaked beans makes a full jar so I do slightly less then add the veg and broth and process everything form raw. Less time and mess for me.

Is your soup pot stainless steel or non stick? I need a new pot and not sure what to buy. I actually bought a beautiful Lodge cast iron dutch oven, but it is so heavy that I can hardly lift the lid, much less lift a pot of stew into the frig!!

The metal ones, we toss them into a drawer and keep them. We use them for storing dry-goods.

Eileen, I save our undamaged used lids to vacuum seal jars of dried foods, using the FoodSaver Jar accessory. No need to buy new lids for that. If one used lid doesn't work, toss it and grab another one. These can also go into the white plastic one piece lids for mason jars. (I use the ones from Walmart.) They don't have a sealing gasket inside. By inserting a canning jar lid, then screwing down the plastic lid, the canning lid becomes a "gasket". This is good for temporary storage of dry foods that you don't want to vacuum seal for some reason. Hope this helps. SAVE those used lids!! :-)
