Machacar o cortar aceitunas sin curar

PREPARACIÓN
En primer lugar lavaremos las aceitunas y quitaremos las que tengas algún defecto.
Yo voy a curar aceitunas de la variedad gordal.
Una vez lavadas las escurrimos.
Una vez limpias, cogemos una a una las aceitunas y con una mano de mortero, un martillo de madera le damos un golpe seco hasta partirlas. Este método ensucia un poco.
Si no queremos ensuciar tanto podemos rajarlas o cortarlas con un cuchillo.
Para ello haremos tres cortes a cada aceituna con un cuchillo.
A continuación en un cubo pongo el agua suficiente como para cubrir las aceitunas.
Dejamos en remojo 24 horas.
Trascurrido el tiempo tiramos el agua, y lavamos bien la aceituna. La manipularemos siempre con guantes.
Cambiamos el agua, y la dejamos otra vez a reposo.
Este proceso lo haremos 1 vez al día durante 7 días. Si cambiamos mas veces el agua al día el proceso se puede aligerar.
Pasado los 7 días probamos las aceitunas si están dulces ya se pueden aliñar , sino dejarnos mas días en agua hasta que estén a nuestro gusto.
En mi caso yo las he dejado 10 días.
El ultimo día las escurrí bien y a partir de ese momento se pueden aliñar

PREPARATION
First of all, we will wash the olives and remove the ones that have a defect.
I'm going to cure olives of the gordal variety.
Once washed, we drain them.
Once clean, we take the olives one by one and with a pestle, a wooden hammer, we give a sharp blow to split them. This method is a bit messy.
If we don't want to get so dirty we can slit them or cut them with a knife.
For this we will make three cuts to each olive with a knife.
Next, I put enough water in a bucket to cover the olives.
Let it soak for 24 hours.
After time we throw the water away, and wash the olive well. We will always handle it with gloves.
We change the water, and let it rest again.
We will do this process once a day for 7 days. If we change the water more times a day the process can be lightened.
After 7 days we taste the olives if they are sweet and they can be seasoned, but leave us more days in water until they are to our liking.
In my case I have left them for 10 days.
The last day I drained them well and from that moment they can be seasoned
