Full written recipe for Curd Rice
Prep time: 10-15 minutes (excluding soaking time)
Cooking time: 15-20 minuets
Serves: 4-5 people
Ingredients:
RICE | चावल 1 CUP (SONA MASURI)
WATER | पानी 3 CUPS
MILK | दूध 1.5 CUPS (ADDED GRADUALLY)
CURD | दही 1.5 CUPS
SALT | नमक TO TASTE
GHEE | घी 2 TBSP
CHANA DAL | चना दाल 1 TSP
URAD DAL | उरद दाल 1 TSP
MUSTARD SEEDS | राई 1 TSP
GINGER | अदरक 1 TSP (CHOPPED)
GREEN CHILLI | हरी मिर्च 2 NOS.
RED CHILLI | लाल मिर्च 2-3 NOS.
CURRY LEAVES | कड़ी पत्ता 8-10 NOS.
ASAFOETIDA | हींग 1/2 TSP
FRESH CORIANDER | हरा धनिया A SMALL HANDFUL (CHOPPED)
Method:
Add the raw rice into a bowl & wash 2-3 times using fresh water, then pour plenty of water into the bowl & let the rice soak for 15-20 minutes.
Once soaked, discard the water & add the rice into a pressure cooker, add water & pressure cook the rice over medium high flame for 4-5 whistles.
Switch off the flame & let the cooker de-pressurize naturally, then open the lid & stir while mashing the rice, once mashed let it rest & come down to room temperature or until it’s only lukewarm.
Further add the milk gradually & keep stirring, once all the milk gets incorporated add the whisked curd, salt & mix again.
For the tempering, set a pan over high heat & once it gets hot add in the ghee & let it get hot.
Once the ghee heats up, lower the flame add urad & chana dal, stir & cook until the dals turn light golden brown.
Then add mustard seeds along with the chopped ginger, give it a quick stir & then add green chilli, red chilli, curry leaves & asafoetida, stir & cook for a minute then add the tadka into the curd rice & mix well.
Lastly add chopped fresh coriander & mix.
Your delicious curd rice is ready, garnish it with some pomegranate & serve some pickle along with it.

As a Telugu girl, I can say that the comfort n soothing feeling that daddojanam gives is like bliss..☺️ Having it with Dosaavakaya (yellow cucumber pickle) or Mango pickle or Lemon pickle takes the feeling to next level. This recipe u have shown is of South-Indian hotels. In the authentic South-Indian temple prasadam, green chillies n pomegrenate are not used. Instead crushed pepper is put n it tastes divine😌 Also eating curd rice on a banana leaf is undescribable👌

Curd rice is a must-have in our weekly menu. It's our go-to when we're feeling a bit sluggish or need something easy on the stomach. I love adding grated veggies like carrot and beetroot for that crunch and extra nutrition. A touch of sweetness from deseeded dates, along with the burst of flavour from pomegranate, really elevates the dish. And to kick it up a notch, we use our homemade Salted Curd Chilli in the tadka for that perfect spiciness. Curd rice is simply comfort food at its finest!

Iss mein Dhoodh ka quantity kam hai Aur curd ka quantity jyada hai so little bit salt is not harmful.

​​​​​@@beingaPrince Ayurveda also says u should have everything in moderation. u can make curd rice with only curd as well without milk. It will be tasty too . There are different options for food recipes to make it healthy. Just don't forget that. Btw Ayurveda also says u should not eat fish and curd together, but aren't there people who eat it together😂😂. There are fish curries which add curd to it.

Being a Konkani our staple food is rice and once child turns one year old, our elders start kids food with curd rice, buttermilk rice and milk rice,our lunch and dinner is incomplete without curd rice and milk rice, which easily helps in digestion of all the spices we had before, Thank u bro for this yummy food my mouth is just watering like anything❤❤😋😋😋

Your pronunciation is bang on for someone who has probably never spoken Tamil in his life. It is “Mor Milagaai”, where the Mor is pronounced like the Hindi word for peacock. Also, I cook the tadka in coconut oil, love it that way. ❤️ curd rice tastes amazing with crispy aalu fry.

Curd rice is not only Andhra or Tamil Recepie. It is also quite popular comfort food in Karnataka it is known as "Mosaranna". And you can find lot of variations in Karnataka.

For a more nuances preparation and add fresh cream of the milk instead of white butter. Each ingredient will alter the texture of the curd rice.😉🙌🏾 Happy to watch a chef teach how a curd rice is done. I hate north indian 5* hotels make crud rice. This video has proper instructions.

Appreciate your effort to depict the preferred and most ideal combination of 'mor molagai' and 'maavadu' with 'thayir sadam'. Curd rice is a comfort food always... very easy for digestion. Hi chef, im south Indian!! Thanks for sharing one of my most favorite recipe😋😋 This delicious dish is a great surviving meal for us in very hot tropical temperatures here especially during summers. I was hesitant to use the same amount of milk as curd but the curd rice surprisingly turned out amazing. I honestly wish i hadnt put a tadka because the plain salted curd rice was in itself so good. Thank you for the recipe

Superb, Chef.. My mom makes curd rice for travel or for later use this way. She mashes the rice when its hot, and adds hot milk, mixes and leaves for a couple of minutes. The rice thickens. Then she adds hot milk again , as much milk to make the rice sort of semi solid. Then let's it cool. Then she adds a tbsp of curd , salt and tadka of mustard seeds, finely minced ginger, Hong and curry leaves. This doesn't become sour easily. Can be used even after 2 days- just add milk or water and mix when serving. Helpful during hot summer for packed lunches.

While cooking the rice put about half cup milk. When we make for naivedya especially then we actually put only one tablespoon curd and add lukewarm milk to the rice. So we actually dahi jamate hain. We do this cod we don't curd rice to become sour and we can't put bhagwan ka prasad in the fridge till the pooja is done.

To tell you the truth, I am not much of a curd rice fan (even though my friends keep on going about the merits of the thing) but the way you made sounds interesting and textural. And adding ginger, chillies and promogranate brings in the freshness that is so often lacking curd rice atleast the one I have had so far. Use of milk seems counter intuitive along with curd but it could be the single most important factor that could help in controlling the sourness that often ruins the curd rice experience. Kudos chef!! I would definitely try this recipe!

Adding milk and a little curd is the way to do it. That way it will not go sour. Add ice cubes in summer after the curds are set.

Chef being tamilan we follow few steps more , in tadka mostly we add mustard and raw peanut. And also add two to three spoons of fresh cream it gives great texture to the food.

We Andhra people will take out all seeds from long mirch and will soak in soar curd with salt and hing (overnight soaking)and then dried on a politheen under the sunfor 5 to 6 days and will store for a year We fry in oil to that respective dishes like curd rice , dal thadka, rigid gourd dal, tomato dal mango dal ect

Soul comforting recipe Chef. I make curd rice by setting the curds in the rice itself along with the tadka. Once the curd is set. Keep the curd rice in the fridge for sometime before serving. This chilled recipe of curd rice is awesome. Try it !

Actually, it is a good idea to add a few ice cubes to the curd rice at the end and bury it in the dish. It will be it chilled till it is eaten and will also provide water that the rice needs

Thanks Chef Sanjyot Keer. What do you think of adding just buttermilk, instead of milk and yogurt? Thinking the consistency and sourness may be the same, but with added probiotics from the buttermilk?

The combination of milk mixed with curd tends to keep the curd rice still moist as the curd continues to curdle the milk contents in it. This is recommended when the consumption is much later than the preparation as otherwise the rice tends to soak in the curd making the preparation quite stiff instead of a nice mushy texture. It also helps in balancing the sourness levels which buttermilk cannot do.

In Maharashtra it is Sandgi mirchi or Takatli mirchi.. And the pickle is balkairicha loncha!

(It is not recommended to consume milk immediately after eating curd rice. Curd (yogurt) and milk are both dairy products, and consuming them together can lead to indigestion and discomfort. ) I appreciate your videos and talent and the mixing combos your videos are really good but I have an doubt about this
