If you like a nice bright red color color while being healthy, I have discovered adding 1/4 - 1/2 tsp of red beet powder will provide the effect. It does not affect the flavor of the char Sui.

You can use honey or maltose as well. It's a tedious process but we constantly brush our roast pork with honey whilst roasting the traditional way. 蜜汁叉燒 is what we call it AKA honey sauce roast pork

I use it too. I used to make it from scratch but I kept having to through out the bean curd since I don't use it that often. I just wish it wasn't made with corn syrup.

Try adding achiote to get that red color naturally. It's used in Caribbean and Mexican cuisines to get that signature red hue.

I'm wondering if you could sub in ether Grenadine or just pomegranate juice and remove some of the sugar. It will thin the sauce but will add in a natural red colour as well as a natural sweetness. It might change the flavour very slightly though.

Poor Piggy 🐷 I happen to love Pigs myself as they always uplift my spirit, but I'm a hypocrite for consuming them. Char Siu and Sui Yuk are so tempting. My mom always calls me a pig. She calls me one as a toddler, and I would always run around the household.

Cooking it in the air fryer is an interesting idea but mine is so small I wouldn't be able to make enough. When I make a batch I make a fairly good amount and then freeze it for later use. Daddy Lau is always entertaining though so I watched the whole thing!

I will try this in my Breville Smart Oven Air Fryer since it has more space for larger quantities. But since it only takes 20 minutes, you can cook as needed for each meal. I’m going to use my Chinese red wine lees….since it’s bright red naturally for the marinade.

Why does the store bought char siu meat look darker than the homemade one? Even the texture is different. The homemade one is white in appearance. It's not as good as the store.

Basically, because the cooking is more even in an air fryer. Storebought char siu isn't made in an air fryer, and then it gets racked up in a heater to stay warm until someone buys it. There's a lot more time to char the surface and the juices will flow downwards in the meantime. Plus, they're making it in much larger batches rather than lavishing attention on each single piece.

Your dad says that cooking at a low temperature for a longer time will dry out the meat. That’s not correct for the cut of meat he used. The pork butt is the cut used for pulled barbecue pork which is typically smoke cooked at about 250° for hours. There’s a whole segment of the restaurant business in America devoted to cooking in this style and numerous cooking competitions. I am sure your dad’s recipe is delicious but pork butt is going to take a very very long time to dry out. Certain muscles of pork are different, if he was talking about the loin or tenderloin then I would agree.
