This week on Simply Ming, it's all about Texas Wagyu Beef! Ming's in cattle country, right outside of Dallas, Texas. Cooking with him is the "Father of Southwestern Cuisine," Dean Fearing. Together Dean grills up a Wagyu Rib Eye Grilled Over Live Mesquite with a West Mop Sauce and Cornbread Pudding while Ming creates a Jalapeno Wagyu Poke. (Episode 1323)

The restaurant "Fearing" rated #1 hotel restaurant in the U.S. by Zagat. He was head chef for 20 years at The Mansion on Turtle Creek ($100 a person back then). His Fearing restaurant shows no prices at all for the menus at their website.

The ranch is not "right outside of Dallas". The only thing right outside Dallas are 30 surrounding cities. Could say "20 miles past the last suburb of Dallas".

"Wagyu" (和牛) simply means "Japan cow". There are four different breeds of Wagyu, two are black. These appear to be Japan Polled (both sexes hornless). Note that they will still market those crossed with Angus as Wagyu, thus getting more money than for pure Angus.

How can he stir from 6 feet away while Dean adds ingredients? He would need a 3 foot spoon with a hinge.
