I filmed my entire Saturday to share with you! This was a hang out at home, no where to go kinda Saturday! I'm sharing my favorite blueberry muffin and meatloaf recipes and of course a lot of cleaning and spending time with my kids all the while! This is PART 1 so subscribe and come back for part 2! ~Jess
Quick and Easy Blueberry Muffins
1 1/2 cups (all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 large egg
1/3 - 1/2 cup milk
1 1/2 teaspoons vanilla extract
6 to 8 ounces fresh or frozen blueberries about 1 cup frozen blueberries
**Preheat oven to 400º F
In a large bowl whisk flour, sugar, baking powder and salt,
Use a measuring cup that holds at least 1 cup and add vegetable oil, egg and then fill the cup to the 1-cup line with milk (about 1/3 to a 1/2 cup of milk).
Add vanilla and whisk until combined.
Add milk mixture to the bowl with flour and sugar then use a fork to combine. Do not over mix. (The muffin batter will be pretty thick).
Add blueberries and use a spatula or spoon to gently fold the blueberries into the muffin batter.
Divide the batter between the muffin cups filling about ½ full.
Bake for 15-20 minutes
Best Ever Meatloaf:
2 pounds lean ground beef
1 onion diced small (about 1/2 cup)
2 eggs
1/2 tsp. ground pepper
3/4 cup bread crumbs (I like to use Italian style)
1 Tbsp. Worcestershire sauce
1 tsp. garlic powder
1 tsp. onion powder
1/2 cup ketchup
Glaze Topping:
1/4 cup ketchup
1/4 cup brown sugar
Instructions
Preheat oven to 350ºF. Spray a 9x5" loaf pan with cooking spray.
Mix together ground beef, onion, eggs, pepper, oats, Worcestershire sauce, garlic powder, onion powder and ketchup in a large bowl, using your hands. Do not over mix.
In a small bowl, combine the ketchup, and brown sugar Spread on top of meatloaf and place in oven. Bake for 1 hour and 15-30 minutes, or until meatloaf is cooked through. Let cool for a few minutes and then slice and serve.
