That waiter is very skilled. That is how you do it. I wish I could debone fish like that. I try, but I can't get close. He got every piece of meat out of that fish plus he took out the ribcage. Very nice.

Yes, he certainly knew what he was doing. We loved Ristorante Miky in Monterosso, Cinque Terre. The food, location, and friendly service were all top notch.

Wow. I was filleting the fish, all that work. Now I have a new technique to serve myself and friends. Just cook the bitch whole, love it! Fork and spoon fork and spoon. All I need now lol
