Yes it does feel good to fill my pantry. When I was growing up Women’s Lib really belittled home economics and taking care of a family, but just think about how important a woman’s “house work” was, if she didn’t do it her family would starve, she was every bit an equal partner to her husband everything that she did was to keep them alive, how in the world did that ever get distorted and belittled? When you said these will get us through the winter, I wonder how many women have thought that as they harvested there gardens and filled their pantry and root cellar, the importance of traditional “woman’s work” really hit me. The look on your face was filled with accomplishment and joy, you know that your keeping your family alive, what job could be better than that? Thank you Bev for all that you’ve done to keep my family alive😘

Thank you so much- for a couple years or so I’ve been wondering why I can buy minced onions and not bell peppers- last summer I bought a dehydrator and I can’t wait to harvest my garden this year and get to work!! Homemaking is a lost art- after a failed apple year marriage in a standard American lifestyle I’m now working from home and starting to “homestead”! It’s o exciting!

I thought I'd share, I use a 32 qt bowl to empty the beautiful dried foods in. I never have to chase the escapees. Love your videos of "how I do it"😍

Your dehydrated peppers and garlic would make a great dip mixed with sour cream. Gluten free treat for Arthur with some plain potato chips.

Lord, yes, it feels great to have a full pantry! I love dehydrating, because it only takes a tablespoon or two of dehydrated peppers and onions to season an entire dish. I'm on a really tight budget and I try really hard to not waste anything. So many people who live alone or with only one other person use half of a pepper or onion and a stalk of celery, and before they know it, the rest of what they bought goes bad. No big deal if food is plentiful or you have a lot of money, but most of the people I know don't have either. My house rule is to dehydrate or can whatever isn't used in a week. I can't begin to tell you how much that saves me! This month alone I was able to use my food money to buy bulk packages of fresh, boneless chicken breast to freeze and can, and pork shoulder to make sausages to freeze and/or can. I got 12 lbs of sausages . and 40 lbs of chicken breast put up for future meals, but that meant about $70 out of my budget for 2 people is spent. But I won't have to onions, green pepper, celery or a whole slew of other things because they're nicely dehydrated and shelf stable. Add the canned vegetables from the garden all sitting on the shelf! Now that feels good!

Thanks Bev. I never thought to blanch my peppers before dehydrating them. I'll have to do that if I get enough peppers this year. I'll be glad when it cools off so I can run my dehydrator. The temps are still in the mid 90's during the day (not counting the heat index) but nights are beginning to cool some. I love having a full pantry too. Much Love

I love watching your dehydrator videos! I have so much in food storage, I buy when it's on sale, dehydrate all year and rotate everything! Love it all in soups and dehydrated fruits for snacks! So good!

Just got thru preparing a 5 gallon bucket of Bell Peppers to dehydrate. We had to pull them early before a frost, so most of these are green . So I said, "Let me get a refresher course from Bev ." Just made Sweet Pepper Relish yesterday . PEPPERS, PEPPERS, PEPPERS ! A GOOD THING !

Another awesome video! Just what I needed to see, as sweet banana peppers were the only thing that grew well in the dry heat this summer. What a pretty color blend of peppers. You are always SO busy! ❤️🍅 🌶 I already have a dicer with all the attachments which I love.

I love my chop wizard, it sure makes things easier if you have a lot of veggies to chop. Beautiful peppers ... I'm glad you told us about blanching the peppers before dehydrating them, I didn't know that. I love having soups when it gets cooler weather.

I am glad your sharing your dehydration steps like you have done in the past. I learned something or at least saw a trick you did which was using a jar over center hole in your trays. Thanks for sharing your video with us.

We never stuff green peppers because of indigestion. We use semi hots. I cut semi hots in half and clean them out for the freezer. They add great flavor to chicken soup. Even when I make chili I use orange and yellow sweets because I just don't digest green peppers very well. I tried dehydrating basil with my oven. They got black spots all over, and I had to throw them out.

Basil dries in warm dry air. It's hard to succeed with herbs using an oven, because it gets too hot. I put mine outside in a framed box covered in fiberglass fabric for greenhouses or chicken feed bags. The trays have a fiberglass screen (like for screen doors) in them. It's lasted for years, only needing the outside fabric replaced every few years. It works really well for rosemary, baby basil leaves, and fruit leather. Just put dried product in freezer a few days or weeks before placing in your pantry.

I just picked up a 10 pound bag of onions to dehydrate. I also found a clearance on celery hearts. Two per package at $0.89 a bag. I got the last three bags they had. I already have yellow and orange peppers in my freezer. There wasn't enough to even make one tray this time.

this video was perfectly timed a few weeks ago. I dried the first of my peppers and put them aside. Today, I took 3 lbs of peppers, as the main crop is coming in, and made taco sauce.... oh yeah! If it weren't for you and a few others 5 years ago, I wouldn't be canning today. I had to buy cilantro for the recipe; so I priced the total value of my hot sauce while at the store. $20 or more. Yeah. It was worth the work. And the pantry is better stocked for tacos, chili, and hot wings.

Never thought about dehydrating peppers. They're expensive and when I buy them half normally go bad before I can use them. Now I know what to do with the leftover peppers. Thanks! Can you dehydrate tomatoes too or Broccoli and cauliflower?

Thanks for this. I dehydrated some onions last night out in my carport, but I was "winging it". I don't know if I was supposed to blanch or not; didn't think of it until I watched this video. I have celery to dehydrate next.

Always give onions like a fast blanch that I do with peppers..if not they take DAYS to dehydrate..celery for 3 minutes

I dry peppers all the time. I dry mixed medium hot peppers and then sweet peppers. It's really saved food waste. We aren't big fans of the taste of green peppers but we love the colored variety.

You sound like me. With my small family, we may use only half a pepper, onion, or zucchini. If I put in the dehydrator, it can be stored for the Winter to add to soups... and it works. Sometimes I freeze extra too, but not much freezer space.

I had a friend w/arthritis and all peppers (not the green) cause inflammation. Do you experience this too? Peppers with onion yum! Chicken soup sounds greaaaat! God bless.

You really pound on that chop wizard and it seems to hold up well. How long have you had it and is chop wizard the brand name. I've tried 2 mandolins and cut myself bad with both of them

When you store your dehydrated stuff, do you seal them in between uses? I find mine lose its color after a while. And then I get Leary about using them

Are bell peppers smelly when they're dehydrating we used fresh bell peppers from the garden and they just stink and wondering if this is normal? we are using an old dehydrator. It has no fan just two vents one on the top one on the bottom and they have been dehydrating for more than 24 hours

I do think green peppers are necessary when you stuff with ground beef. The bitter contrast adds that extra little something. Even Chef John of Food Wishes said that. But the red are great in other ways.

No especially not with things like peppers I tried it once and it burnt them LOL if you want to seal them for long-term storage you may want to pack them tightly into a jar and throw in a couple of oxygen absorbers but mine don't last long enough I use them over the course of the year

do you make soup powder out of yer dryed vegtables? its cheating i know but sure is a fast way to make soup plus ya get all yer veggies in one soup,, just add meat and noodels and/or rice,, that knife ya using sure would make a good skinning knife..thank you for the video

Are you nor afraid to lug around those huge pans of boiling water? I am afraid your going to get burned someday. I guess though if you had to wait on one of your men to handle everything heavy, you’d never get anything done. Thanks for the video!
