Tip for everyone with round dehydraters: pic up a splash guard for a frying pan from the dollar tree. Just unscrew the handle and place on top of your round dehydraters tray for small pieces. Being stainless steel makes the super easy to clean up and the holes are small enough for those diced food and herbs. They do get warm so be careful when handling. Thanks for all the info.

Great tip! But the diameter still matters - not all round dehydrators are the same diameter, so be sure to measure first.

People gotta know about this channel. Seriously, I am mentioning it in all the food prep and Prepper channels. Buying dehydrated and (heaven forbid) freeze dried food can put you in the poor house very fast. You have given me great hope of increasing my shtf and regular old cycle through pantry. Truly grateful, you sure know your stuff.

I planted 125 of these plants from seeds I saved from buying them last year. Going to dehydrate, pickle and can a lot of sweet pepper soup. Those whole ones can totally be added to long cooked soups after dehydrating. The small pepper flakes can be put on fresh salads...the uses are endless!

Blessings Darcy. It is scary when I watch other dehydrating videos. They do not mention, conditioning. I watch what they are doing and come back to you. Thank you fr helping us to be as safe as possible and saving us from being wasteful.

Don't feel that way. Conditioning isn't a necessary step for dehydrating - but it's one that has saved a ton of molded products on the shelves when people do it.

@@ThePurposefulPantry HI from canada also. thanks for your helpful info. I just dried bell peppers. and i changed the dehydator too operate higher than the recommended 135F ( Nesco). i set to 145F because for some reason at 135 the air was not warm-hot air (unlike my other identical nesco machine at 125 drying something else). so i had to switch game plan to run hotter than 'stated' temp. this switch up now has be doubting things. suspecting case hardening. i dont know if they case hardened. these are chopped frozen bell peppers. called "3-pepper onion blend" by presidents choice. i have run the nesco dehrdrator for almost 24 hours now, rotating trays. the red peppers are kind of bendy but hard on outside. they do no snap clean like mushrooms or squishing peas or snapping green beans. i would not call these red slices strands brittle unless we take a tiny part of one like the end of one, where it was not as thick to begin with. they have a leathery way to them while remaining hard on outside and they pling when dropped. how do i know if these are dry? i assume they are (by time) but cannot find actual info stating when these are ready. i can find actual info describing result for all other foods. but not frozen peppers.

My family love to take those small pepper rings dehydrated and add them to the top of salads without rehydrating. They use them in place of the french fried onions you can get.

Darcy, your videos are amazing! Very well done, you get right down to the point, you address most things we commonly need, I am playing catch up with your dehydrating videos. I just purchased a Magic Mill, 6 tray that I am eager to start using. My grandkids, ages 8 and 6 are involved and they are very much looking forward to it too. I homeschool the kids, and I use every opportunity of every day living to integrate into the lessons. We will certainly use food preservation, planning, dehydration, weighing etc as part of their schooling. by the way, I really like how you model and explain how to get the proper measurement of the final dehydrated problem. The Cosori and Magic Mill are identical because they are made by the same company. I bought the Magic Mill on sale for a much better price, and I LOVE it!

I am so excited to try dehydrating peppers! We always end up with more peppers than I have time to pickle; this is a great way to help deal with the abundance. Side note: I bet the small bits will be perfect for pimiento cheese (yes, I hope to grow pimientos), cheese balls, and all kinds of applications. Thank you, Darcy!

For small diced peppers, celery, onions; I cut up toile the size of my treats and put those on my trays then the veg. This way they don’t fall through once dried.

lots of knowledge here;;;a trick I use when slicing my peppers is to leave the stem on and use stem end to slice;;;less time prepping, desteming and better slices for me;;;;good one enjoy all your info

I love dehydrating. I have dried 3 times already, Mushrooms, Peppers, and Potatoes. So total novice. I live off grid so I watch my power like I never did before. Dehydrating uses power! My burns 1 amp to run fan and electronics and cycles heat between 0 and 15 amps. Washer and gas dryer run 30-ish. That was at 125 degrees, my kitchen is 68 degrees. This is well worth the effort which is almost nil compared to canning. Plus you don't need the care you need with canning. But if money for power bill is an issue don't run for days on end if not needed.

@@ThePurposefulPantry The true benefit of Drying comes in the set and forget. Using a woodstove for two years drying apples mushroom and more but you must watch it like a hawk. If you don't rotate and every 20miuntes you will have burnt food. Plus with all that extra handling there is extra food loss with each slice that slips and drops to stove or floor. Besides I am drying for free now that the rain season is over.

I just scored "a file box"(that size of box) full of green peppers...yep, they were wrinkly already but I couldn't pass them up for $9 on clearance. Got them all diced and of course, looked you up to see how to dehydrate them.

If you seed out first, you can air dry seeds for replanting. Heat dry may destroy the seed propagation.

I love your show !!! I got a dehydrator and so far I have used it every day. I love cooking. I used to be a cook at the nursing home. I did peppers. They were fun and easy. The tomatoes were messy and a lot of work. (drip drip) I made tomato powder. Several recipes called for tomato powder and every place was out... so I made my own. I did celery, garlic, onions, vegetables, kale & spinach & peas. I will get more peppers and more produce. Thank you!

Hey Darcey, I've pickled some of the mini bells before. I don't recommend them because mine turned out a little on the bitter side and somewhat mushy. Both of these problems were new to me. I guess maybe you could place some Pickle Crisp in the jars when you can them and that might help.

I love this video. I am learning so much from you! The whole peppers are gorgeous! I bought a Ninja food processor in September because I burned up my small Kitchenaid food processor. I look forward to using it soon. I have gallons and gallons of Datil Peppers. They are spicy and much hotter than jalapeño peppers. I make Datil pepper: mustard, hot sauce, jelly and a meat baster. I use the whole pepper with stem removed. I am considering drying the whole peppers with pith and seeds and once dried grinding it all into powder and them using the powder when I make the hot sauce or Mustard. My Datil peppers are frozen and the longer they are in the freezer the hotter they get this is based on my experience. I plan to dry some whole and cut as you did the sweet peppers. I will let you know how it goes. Oh I make several gallons of the hot sauce or mustard at one time in an electric turkey roaster. I ❤️ ❤️ ❤️ the look of your whole roasted mini sweet peppers. I hope to find sales on mini peppers and roast some whole.

These are the only peppers my daughter can eat, and I can only eat the peppers that are simply not hot. These could make a great powder for black pepper substitute, I think. Thank you for this video!

I just bought my ninja exactly like yours. I love it .I’m curious now about the color when your done. I saw you force your lid off the cup part of your ninja. There is two kind of push in buttons on the little square part on your ninja lid . Push those in and that lid comes off real easy. You prob already know that but I didn’t so just sharing.

I never thought of dehydrating whole peppers! For whatever reason we cant grow sweet peppers here, so I rely on sales in summer. Then do huge amounts., like you just did! My goal every summer is to have a years worth of peppers between freezing, dehydrating and pickling.

You could try growing these smaller peppers. Two years ago I bought and planted Italian frying peppers from Baker Creek, they are beautiful, thin walled and taste just like regular bell or sweet peppers. Also, I learned that when growing peppers, they do better when they’re competing with one another. I planted three plants to a very large flower pot and that trick worked! I got so many peppers. Don’t give up on growing them, you may be pleasantly surprised like I was . Take care.

@@deborahandrews9728 thank you! I can grow jalapenos till they come out my ears. Bell peppers we dont have much luck with. Last year tried Italian frying peppers for amt of plants we put in we didnt get very much. I keep trying every year changing the types, this year we're trying Hungarian sweets. When it comes to potatoes, onions and peppers, even though we planted them, I take no chances and buy on sale and put them up. If per chance by the grace of God the garden does well, the more the merrier my pantry is!!!🙂

I don’t remember who it was that shared that information on crowding the peppers together, but I figured it couldn’t hurt. After that I was done. But, it works. But, realistically for me it just gets way too hot for bell peppers in my zone 9b garden. My mother in law grows hers best in the fall. Have a wonderful day and happy gardening!

How do you know which items should be cooked before you dehydrate? I watched one episode where you were talking about the taste of dehydrated caramelized onions so which veggies do you cook first. I like the taste of sautéed peepers or fire roasted peppers

I actually quarter them length-wise and then dehydrate them. Perfect to pop into one of my dehydrated individual meals for more flavor. I was wondering if since you left the seeds inside, would they still be okay to replant?

I may have cut out the quartering ones - I can't remember now lol. Generally, the temps are too hot to replant, but you can always try.

Yes. As a seasoning, in salad dressing. You can add it to anything for a different flavor profile.

I grew some Thai chili peppers this year (not the tiny Birds Eye kind). Do I need to slice into them to dehydrate? They are long and slim peppers kind of like a cayenne.

Darcy - thanks for the vid. Quick question- w/sweet peppers there is some ‘stickiness’ after drying . Does that indicate moisture or is it unique to the fruit?

There's sugar - and a little tackiness may happen, but if it is sticky - dry it more.

Darcy can one shut off the peppers when they are not fully dry and then start it in the morning?

I never recommend to do that - if you can't run it, put them back into the fridge until you can start again. You run the risk of airborne bacteria, mold, and other things settling in while no air is running. If you are okay with running the machine, just turn it down if you don't want the higher heat.

If you don't mind the veggies taking on a papper flavor. It doesn't happen with all - but it can. So be thoughtful about which ones you do.

Don't cut the ones that have fiberglass embedded in them. The ones like the thicker Excalibur sheets and some of the silicone oven mats.

Most foods do not - Vit C & A are the first to go because they are heat sensitive - you'd lose them during cooking, anyway.

No need, which is why I didn't show it. Even blanching will still need cooking time as a blanch is a short cooking spurt - not a long one. If you want, you can, but it's definitely not necessary.

Do you vacuum seal your jar? Also can these be vacuum sealed in a bag for long term storage. Could these be good in stir-fry or just soup and casserole?

No, I generally don't vacuum seal, it's not necessary, but you can. you'd want to cut them before drying if you want throw them into things.

12-18 months, just as if they were in an airtight jar without sealing - it prevents things from degrading too fast, may give you extra time, but 12-18 months is optimum no matter what you dry.

They won't be exactly like they are when freshly cooked, but follow your regular procedure without using any fat/oil and dry.

We repeat: teflon offgasses when heated, creating toxic fumes which will kill pet birds in your home, damaging to small caged pets, cats and dogs. Don't know if the effect on humans has ever been studied.

I have a Cuisinart and I love it better than I did the ninja. I utilize mine almost daily and this one I've had a solid year now and it still rocks but my ninja life was not as long or strong. I hope it works better for yall

Hi I have been dehydrating some pepper, tomatoes and cucumber for the last 36 hours and they are still not dry I did everything like they say to do but they want get dry. Can I put them in the freezer like they are? Didn't want to freeze them but that is all I know to do. Can any one help me?

Are you allowing them to cool before testing them? Were they frozen beforehand? What temp are you drying it at? Keep drying them if they are not dry after testing (once cool).

If you use a thin blade serrated knife, they will slice easier, same with tomatoes.
