Ingredients and Recipe
Titus Fish 1 "use any fish of your choice"
Cut and wash the fish, then transfer in a pot
Onion, Pepper, Garlic, Basil, Mint, Seasoning Powder, Salt and Water
Add it all and give it a gentle mix, then cover and cook for 15 minutes on a medium flame, once done remove it from the water, debone the fine and mince it with a fork then set aside and get other things ready.
Carrot, Pepper, Onion and Spring onion
Grate the carrot, blend or pound the pepper, slice onion and spring onion then set aside.
Oil
In a dry pan add in the oil allow it to hit for 1 minute, add onion and stir fry for 2 minutes, add the minced fish, carrot and pepper stir fry until it is well dry, add spring onion and stir fry for 2 minutes then transfer in a bowl and set aside to cool down.
Flour 2 ½ cup, Baking powder ¼ tsp, Salt ¼ tsp, Nutmeg ¼ tsp, Sugar ¼ cup
Add them in a bowl and mix until well combined.
Butter 80g, add and mix well
Egg 1, add and mix well
Water, add the water gradually and mix. The dough shouldn't be too strong or too soft, it should be in-between then cover to rest for 15 minutes.
In a bowl add flour 1 tbsp, add water 35ml mix and set aside.
On a working surface sprinkle some flour, place the dough and divide into 2, set one aside and work with one first, then cut ½ of the dough in a smaller size and roll it to be flat as you can see in these video then add the fried fish, apply the liquid flour at the edges of the rolling dough and roll it well. In a hot oil, place the fish rolled dough and fry until it turns to golden brown, apply kitchen towel or tissue paper in a strainer or bowl and remove the fish rolls from the hot oil and transfer to the strainer then allow it to cool down and enjoy yourself 😋
