Sauce
1 onion
1 red or green pepper
1 zucchini
1 yellow squash
1 tsp salt to taste
1/2 black pepper
1 tsp basil
1 tsp oregano
1 tsp parsley
I usually use a lot more like adding carrots, more peppers, multiple zucchinis...whatever I have on hand! There's never too many vegetables, just make sure the sauce is covering them.
Tofu Ricotta
1 block of firm or extra firm tofu (slightly pressed)
1 tsp onion powder
1 tsp garlic powder
1.5 tsp salt
1/4 black pepper
3 tbsp dried parsley
3 tbsp nutritional yeast
Juice of 1/2 lemon
Noodles
Oven ready, regular or slices of zucchini will do!
